FOOTBALL SEASON IS HERE!!! Just put your hand upon a chip, when I dip, you dip, we dip!  Go ahead, I DARE you not to read that in song.  These recipes both call for dairy cream cheese but can easily be swapped out for the dairy free cream cheese . Perfect dippers could be sweet potato chips, plantain chips, sliced veggies or your favorite grain free cracker of choice!

Yield Approximately 2 Cups Each

  

Taco Dip:

 

In a large skillet over medium high heat, brown 1 lb ground beef, about 5 minutes.  While the beef is browning make the taco seasoning by combining in a small bowl 2 tsp chili powder, 2 tsp sea salt, 2 tsp black pepper, 1 ½ tsp ground cumin, 1 tsp garlic powder, 1 tsp onion powder and ¼ tsp cayenne pepper.  Add the prepared taco seasoning and ½ cup waterto the skillet with the browned beef and allowed to cook for an additional 3 minutes and remove from heat.  In a small bowl combine 1-8 oz package cream cheese, softened with ¼ tsp ground cumin, ¼ tsp garlic powder and ⅛ tsp cayenne pepper until well incorporated and spread evenly into the bottom of a 7x7 glass dish.  Top the cream cheese layer with the seasoned beef.  Top the beef layer with 2 cups of shredded iceburg lettuce.  Top the lettuce with 1 small tomato, diced.  Top next with a combination of 1 small jalapeno, diced and  1 small orange pepper, diced.  Top next with black olives, sliced.  Serve immediately with your choice of dipper.  Can be stored in a covered dish overnight in the fridge.  Special Notes: To amp this recipe up even more try adding layers of guacamole and salsa! For a different twist deconstruct this dip into nachos and put all the ingredients over a plate of any chip variety!

Cheeseburger Dip:

 

In a large skillet over medium high heat, brown 1 lb ground beef, about 5 minutes.  While the beef is browning make the seasoning blend  by combining in a small bowl 2 tspsea salt, 2 tsp black pepperand 1 tsp garlic powder.  Add the prepared seasoning and ½ cup waterto the skillet with the browned beef and allowed to cook for an additional 3 minutes and remove from the pan to a large bowl and combine with 1-8 oz package cream cheeseand fold to combine.  To the skillet add ½ lb bacon, chopped (about 8 strips) and cook over medium high heat until crispy, about 6 minutes and remove from pan and drain on a paper towel lined plate.  To the fat rendered from the beef and bacon add 1 small onion, diced to the skillet and cook over medium low heat until soft and translucent, about 7 minutes.  In a 7x7 glass dish create an even layer with the beef/cream cheese mixture, top with the cooked bacon and then top with the cooked onions. Lastly top with 2 cups ofshredded cheddar cheeseand serve immediately or place under the broiler for 2-5 minutes until the cheese is melted and bubbly.  Serve with your choice of dipper, can be stored in a covered dish overnight in the fridge.  Special Notes: The cream cheese in this recipe is optional! To try a different twist- deconstruct this dip into nachos and place all the ingredients over a plate of any chip variety!

These two recipes are completely dairy free and 100% delicious. Soaked and softened cashews along with cashew milk create a creamy, smooth and dairy free base for this truly delicious spinach artichoke dip.  Its so tasty and delicious no one would ever guess it’s dairy free.  If you’re growing a bit tired of the same old guacamole recipe (even though its delicious) try my creative new spin by adding jalapeno and mango! It strikes the perfect balance of sweet and spicy!  Serve either of these dips with plantain chips, sliced cucumbers or chips of choice!

 

 

Caramelized Onion Spinach Artichoke Dip:

 

In a large bowl cover 1 cup raw unroasted cashews with water and allow to soak for 6 hours.  In a large skillet over medium heat cook 1small onion, diced in 1 tbsp coconut oil until soft and translucent, about 6-8 minutes.  Once the cashews have soaked, drain off the water and place in a vitamix/food processor/magic bullet along with the cooked onions, 3 cups fresh baby spinach,  2 peeled cloves of garlic, 2 tbsp cashew milk (store bought or homemade), 1 tbsp + 1 tsp nutritional yeast and 1 tsp sea salt and blend until pureed.  Coarsely chop an additional 1 cup fresh baby spinach and 2 cups artichoke hearts (fresh/canned/frozen and thawed) and fold into the cashew/spinach puree.  Serve immediately with your dipper of choice or store covered in the fridge for up to 3 days.

Mango Jalapeno Guacamole:

 

In a large bowl place the flesh of 2 large ripe avocados and mash with a potato masher.  To the mashed avocado 1 small onion diced, 1 mango peeled, cored and diced, 1  jalapeno diced, 2-3 cloves of fresh garlic chopped, ½ cup fresh cilantro chopped, 1 tbsp lime juice, 2 ½ tsp sea salt, 1 tsp black pepper and ¼ tsp cayenne pepper until well incorporated.  Serve immediately with dippers of choice. Can be stored overnight, but be sure to squeeze fresh lime juice over the top to prevent browning and cover.
