6 Simple Popsicles Recipes! (All with sugar free options!) Gluten Free, Dairy Free, Paleo.

These pops are perfect to have on hand when its hot and you need something light, refreshing, and a little sweet! Creamy, fudgey, or icy, I’ve got you covered! Any of these pops can be made with or without sugar.  While Im ready for the cooler weather and all things fall- we might as well go out with a bang- so I made for you EIGHT easy homemade popsicles.  The mojito detox pops are incredibly healthy and would be an excellent way to sneak vegetables into your kids diet (or your own!)

 

Orange Creamsicle: 

Measure 1 ¼ cup heavy cream or coconut cream, 2 tbsp frozen orange juice concentrate, 1 tbsp vanilla extract, ⅛ tsp sea salt, 2-3 packets of stevia, or ⅛-¼ tsp liquid stevia, or 2-3 tbsp honey, and food coloring (natural or regular) for that classic orange color (optional). Pour the ingredients into a blender and blend on high until slightly frothy. Pour into popsicle molds and freeze overnight. If you want the bottom of the pops to have a white cream line, just fill the popsicle molds 90%, freeze them for a few hours, place in the popsicle sticks, and then top with some additional cream. Freeze overnight. Makes 6 popsicles.  

 

Bulletproof Coffee: 

Measure 1 ¼ cup heavy cream or coconut cream, ¾ cup super strong hot espresso, 1 tbsp vanilla extract, 1 ½ tbsp cocoa powder, 2 tbsp melted butter or ghee, ⅛ tsp sea salt, and 3 packets of stevia, or ¼ + ⅛ tsp liquid stevia, or 4 tbsp honey. Pour the ingredients into a blender and blend on high until slightly frothy. If you want the bottom of the pops to have a white cream line, just fill the popsicle molds 90%, freeze them for a few hours, add the popsicle sticks, and then top with some additional cream. Freeze overnight. Makes 6 popsicles.  

 

Fudgesicles: 

Measure 2 avocados (peeled with pits removed), ¾ cup + 1 tbsp cocoa powder, ½ cup + 2 tbsp heavy cream or coconut cream, ¼ tsp sea salt, 2 tbsp vanilla extract, and 2 tsp finely ground coffee beans, and ⅓ cup honey.

For a low sugar option, add 5 packets of stevia + 4 tbsp honey, or ½ tsp liquid stevia + 4 tbsp honey. In a food processor, combine the ingredients until blended. Use a piping bag or ziploc bag with a corner cut out to pour the avocado mix into each of the popsicle molds. Tap out any air bubbles and put a popsicle stick in each of the popsicles and freeze. Makes 5 popsicles.  

 

Mojito Detox Pops: 

Measure 2 avocados (peeled with pits removed), 4 handfuls fresh spinach, 2 handfuls fresh mint leaves, 2 tbsp lime juice, 1 cup heavy cream or coconut cream, pinch of sea salt, 4-5 packets of stevia, or ½ tsp liquid stevia, or 4-5 tbsp honey. Combine all ingredients in a food processor until blended and pour into popsicle molds, add popsicle sticks, and freeze. Makes 6 popsicles. Note: if you do not have fresh mint leaves, you can use ½ tsp mint extract.  

 

Peaches & Cream: 

Measure 1 cup heavy cream or heavy coconut cream, 1 cup peaches (fresh or frozen), plus 1 cup diced peaches to use later, 1 tbsp vanilla extract, ⅛ tsp sea salt, 4 packets of stevia, or ½ tsp liquid stevia, or 4 tbsp honey. Combine all ingredients in a food processor until blended and fill popsicle molds 90%. Add diced peaches to each mold (optional). Partially freeze until slushy-like, then add the popsicle sticks. Free completely. Makes 7 popsicles.  

 

Red, White, and Blue ‘Rocket’ Pops: 

1st red layer (cherry): Measure ¼ cup water, 1 cup cherries (fresh or frozen, stems/pits removed), ½ tsp vanilla extract, pinch sea salt, and 1 packet stevia, or ⅛ tsp liquid stevia, or 1 tbsp honey. Blend ingredients together in a small blender like a Magic Bullet. Use natural or regular food coloring to intensify the red color (optional). Fill each popsicle mold ~1 inch and partially freeze. When the red layer is slushy-like, add the popsicle sticks, and the red will freeze around them, holding them in place. Freeze completely before adding the next layer. Makes 9 1-inch layers.  

 

2nd white/pink layer (pink lemonade): Measure 6 tbsp coconut water, 4 tbsp lemon juice, and 2 packets of stevia, or ¼ tsp liquid stevia, or 2 tbsp honey. Blend together in a small blender and pour on top of the frozen red layer, ~2 inches. The white lemonade will turn pink when poured on top of the frozen red layer! Freeze completely before adding the final layer. Makes 5 2-inch layers.  

 

3rd blue/purple layer (blueberry): Measure ¼ cup water, 1 cup blueberries (fresh or frozen), pinch sea salt, and 1 packet of stevia, or ⅛ tsp liquid stevia, or 1 tbsp honey. Use natural or regular food coloring to intensify the purple color (optional). Blend ingredients together in a small blender and pour on top of the frozen white/pink layer, ~1 inches. Freeze completely. Note: you could substitute raspberries in lieu of blueberries. Makes 7 1-inch layers.
