Paleo & Nut Free Crepes! 4 Flavors: Vanilla, Chai, Chocolate & Pumpkin.

Back when I was a kid my family was friends with the flying wallendas (Specifically Tino and Olinka! Well I shouldn't say was- my parents still are but we havent seen them in a very long time. In the 90’s they came to the Ohio state fair , and living in Cleveland at the time we went to see them. We watched them perform which of course was fascinating and then the next day came back to have breakfast with them at their travel trailer.

Olinka made a huge batch of crepes for us and their large family. It was my first time ever having them and ever since that day I have been fully obsessed with them!! I think of that day more than 19 years ago every single time.

So, I share my obsession with you, in a typical ME way including all the flavor variations. Vanilla, Chai, Chocolate & Pumpkin! All the flavors are delicious, and all are worth making!! Perfect for Summer, Fall or the Holidays!

Basic Vanilla Crepes

Yield 12-15 crepes

5 large eggs 

1 ¼ cup dairy or non-dairy milk (275g) 

3 tbsp honey (54g) 

1 tbsp vanilla extract 

1 tbsp melted butter or coconut oil 

⅓ cup + 2 tbsp tapioca starch (59g) 

¼ cup + 3 tbsp coconut flour (73g) 

⅛ tsp sea salt 

 

  1. Place all of the ingredients into a blender or a large bowl for stand mixer and mix until well blended. 

  2. Preheat a well oiled crepe pan or small skillet over medium heat and place about ⅓ cup of the crepe batter in, one at a time, and quickly rotate the skillet to thin out and evenly distribute the batter in the pan. 

  3. Cook for about one minute, carefully flip and cook for an additional minute. 

 
 

Chai Crepes

Yield 12-15 crepes

5 large eggs 

1 ¼ cup dairy or non-dairy milk (275g) 

3 tbsp honey (54g) 

1 tbsp vanilla extract 

1 tbsp melted butter or coconut oil 

⅓ cup + 2 tbsp tapioca starch (59g)

1 ½ tsp ground cinnamon 

1 tsp ground cardamom 

1 tsp ground ginger 

⅛ tsp black pepper 

⅛ tsp sea salt 

 

  1. Place all of the ingredients into a blender or a large bowl for stand mixer and mix until well blended. 

  2. Preheat a well oiled crepe pan or small skillet over medium heat and place about ⅓ cup of the crepe batter in, one at a time, and quickly rotate the skillet to thin out and evenly distribute the batter in the pan. 

  3. Cook for about one minute, carefully flip and cook for an additional minute. 

 
 

Chocolate Crepes

Yield 12-15 crepes

5 large eggs 

1 ¼ cup brewed coffee (275g) 

6 tbsp honey (108g) 

2 tbsp vanilla extract 

⅓ cup + 3 tbsp tapioca starch (57g) 

¼ cup + 3 tbsp coconut flour (73g) 

¼ cup cocoa powder (23g) 

¼ tsp xanthan gum  

¼ tsp sea salt 

 

  1. Place all of the ingredients into a blender or a large bowl for stand mixer and mix until well blended. 

  2. Preheat a well oiled crepe pan or small skillet over medium heat and place about ⅓ cup of the crepe batter in, one at a time, and quickly rotate the skillet to thin out and evenly distribute the batter in the pan. 

  3. Cook for about one minute, carefully flip and cook for an additional minute. 

 

 

Pumpkin Crepes

Yield 12-15 crepes

5 large eggs 

2 cups dairy or non-dairy milk (440g) 

½ cup pumpkin puree (112g) 

6 tbsp pure maple syrup (108g) 

1 tbsp melted butter or coconut oil (14g) 

1 tbsp vanilla extract 

1 ⅓ cup + 3 tbsp tapioca starch (156g) 

¼ cup + 3 tbsp coconut flour (73g) 

2 tsp pumpkin pie spice 

1 tsp ground cinnamon 

¼ tsp sea salt 

¼ tsp xanthan gum 

 

  1. Place all of the ingredients into a blender or a large bowl for stand mixer and mix until well blended. 

  2. Preheat a well oiled crepe pan or small skillet over medium heat and place about ⅓ cup of the crepe batter in, one at a time, and quickly rotate the skillet to thin out and evenly distribute the batter in the pan. 

  3. Cook for about one minute, carefully flip and cook for an additional minute.
