RAW Cookie dough bites!! 6 Flavors. (Choc Chip, Double Choc Chip,  Mint Choc Chip, Snickerdoodle, Funfetti, &amp; PB). Paleo, Keto, Egg Free. Nut Free &amp; Dairy Free.

RAW Cookie dough bites!! 6 Flavors. (Choc Chip, Double Choc Chip, Mint Choc Chip, Snickerdoodle, Funfetti, & PB). Paleo, Keto, Egg Free. Nut Free & Dairy Free.

This cookie dough was created exclusively for eating raw. Don’t bake it..because I don’t have the slightest idea what will happen.  What you should do however is make a batch and freeze it- and then you’ll have the most delicious treat just waiting for you any time a craving strikes. You can also use ANY of these cookie dough’s in any of the ice cream recipes from pages 00-00. The key is to form balls and freeze them solid and then just stir them into the ice cream. For several of these recipes you’ll notice Im giving you two recipe options- one using almond or cashew flour and the other using coconut. This way no matter what your allergies are you can enjoy this treat! For those of you eating low carb/keto/sugar free I included a chocolate chip cookie dough for you too!

Cookie dough bites (6 flavors)

Yield: about 1 cup of cookie dough per batch

 

Chocolate chip cookie dough

Almond Flour/Cashew Flour Version: 

In a small bowl mix together: ¼ cup of blanched almond flour or cashew flour, 6 Tbsp of Tapioca or Arrowroot Starch, 2 Tbsp of slightly softened butter or shortening, 1 Tsp of Vanilla Extract, 3 Tbsp of Granulated Sugar (Organic Cane, Granulated Honey, Palm Sugar or Xylitol) 1/8 tsp Salt, 1 Tsp. Milk, 3 Tbsp chocolate chips (dairy, nondairy or sugar free)  Form into balls and freeze on a parchment lined cookie sheet. Then store them in a bag or container in the freezer for up to 1 month.

 

Nut Free Coconut Flour Version: 

In a small bowl mix together: ¼ cup of coconut flour,6 Tbsp of Tapioca or Arrowroot Starch, 3 ½  Tbsp of slightly softened butter or shortening, 1 Tsp of Vanilla Extract, 4 Tbsp of Granulated Sugar (Organic Cane, Granulated Honey, Palm Sugar or Xylitol) 1/8 tsp Salt,1 Tbsp. Milk (dairy or nondairy) 2 Tbsp Applesauce, 3 Tbsp chocolate chips (dairy, nondairy or sugar free)  Form into balls and freeze on a parchment lined cookie sheet. Then store them in a bag or container in the freezer for up to 1 month.

 

Keto/Low Carb/Sugar Free Version:

In a small bowl mix together: 1 cup of blanched almond flour or cashew flour, 1 ½ tsp of vanilla extract, 1 ½ Tbsp of Softened Butter or shortening, Pinch of salt, 1 packet of powdered stevia ( 1 gram) 1 Tbsp of Xylitol, 1 Tsp Milk (dairy or nondairy) ¼ cup of sugar free chocolate chips. Form into balls and freeze on a parchment lined cookie sheet. Then store them in a bag or container in the freezer for up to 1 month.

 

Double Chocolate Chunk or Chocolate Mint Cookie Dough

 

Almond Flour/Cashew Flour Version: 

In a small bowl mix together: ¼ cup of blanched almond flour or cashew flour,1 tbsp of cocoa powder,  6 Tbsp of Tapioca or Arrowroot Starch, 2 Tbsp of slightly softened butter or shortening, 2 Tsp of Vanilla Extract, 31/2 Tbsp of Granulated Sugar (Organic Cane, Granulated Honey, Palm Sugar or Xylitol) 1/8 tsp Salt,1 Tsp. Milk,3 Tbsp chocolate chips(dairy, nondairy or sugar free)  Form into balls and freeze on a parchment lined cookie sheet. Then store them in a bag or container in the freezer for up to 1 month.

Note: To make the recipe chocolate mint omit 1 tsp of vanilla and add 1 tsp of mint or peppermint extract

Snickerdoodle or Funfetti Cookie Dough

Almond Flour/Cashew Flour Version: 

In a small bowl mix together: ¼ cup of blanched almond flour or cashew flour, 6 Tbsp of Tapioca or Arrowroot Starch, 2 Tbsp of slightly softened butter or shortening, 1 Tsp of Vanilla Extract,3 Tbsp of Granulated Sugar(Organic Cane, Granulated Honey or Xylitol) 1/8 tsp Salt,1 Tsp. Milk (dairy or nondairy) Form into balls and freeze on a parchment lined cookie sheet. Then store them in a bag or container in the freezer for up to 1 month. To make the recipe snickerdoodle flavored add  1 ½ Tsp of cinnamon. OR To make the recipe funfetti stir in 3  tbsp. of rainbow sprinkles.

In a small bowl mix together: 1 cup of blanched almond flour or cashew flour, 1 ½ tsp of vanilla extract, 1 ½ Tbsp of Softened Butter or Ghee,Pinch of salt,1 packet of powdered stevia(1 gram) 1 Tbsp of Xylitol,1 Tsp Milk(dairy or nondairy) and 1 Tsp of Cinnamon. Form into balls and freeze on a parchment lined cookie sheet. Then store them in a bag or container in the freezer for up to 1 month. Note: this recipe cannot be made funfetti as sprinkles contain sugar. 

 

Peanut Butter or Sunbutter Cookie Dough

 In a small bowl mix together ¼ cup of Peanut Butter or Sunbutter, 5 Tbsp of Tapioca or Arrowroot Starch, 1 ½ Tsp of vanilla extract, 1/8 Tsp of Salt, 2 Tbsp of Slightly Softened Butter or Shortening, 4 Tbsp of granulated sugar(Organic Cane, Palm Sugar, Granulated Honey or xylitol) Form into balls and freeze on a parchment lined cookie sheet. Then store them in a bag or container in the freezer for up to 1 month

Optional: Stir in 3 Tbsp of Chocolate Chips (Regular, Dairy free or Sugar free)
