8 Classic Cookie Recipes! (Paleo, Gluten Free, Grain Free, Egg Free, Nut Free, Dairy Free)

As we head into fall- Im so excited to bake my heart out! This post contains ALL the classic cookies that you could possibly want or need in ONE SPOT! Gingerbread Men, Snickerdoodle Cookies, Peanut Butter Kiss Cookies, Copycat Toll House Chocolate Chip Cookies , Raspberry Walnut Thumbprint Cookies , Classic Shortbread and Pumpkin Chocolate Chip Cookies!

Each recipe was tested to perfection and is delicious- however I did have a few favorites!! I really loved the Copycat Toll House Chocolate Chip Cookies and the Pumpkin Chocolate Chip Cookies!! BUT, Im generally a sucker for choc chip cookies in general!

All of the recipes yield: 1-2 dozen cookies.

A Few of the cookies call for a Nut Free Baking Blend . Here is the recipe for that:

NOTE: USE GRAM MEASUREMENTS if you want the recipes to turn out.

For every time 1 cup of Flour is called for:

3 ½ Tbsp of Cassava (34 grams)

3 ½  Tbsp Coconut Flour (23 grams)

9 Tbsp of Potato Starch or Sweet Potato Starch (87)

Total: 145 grams. 

Gingerbread Espresso Men 

2 ½ cups blanched almond flour (360g) 

1 cup Tapioca or Arrowroot Starch (132 grams)  

3 Tbsp Shortening (36 grams)  

1 cup coconut palm sugar or xylitol (160 g) 

1 ¼ tsp baking powder 

2 tsp ground ginger 

1 tsp ground cinnamon 

½  tsp ground nutmeg  

½  tsp salt 

5 ½ tbsp molasses (77 grams) 

5 tbsp unsweetened applesauce (75 grams) 

1 tbsp vanilla extract 

1 ½ Tsp Ground Coffee (optional) 

 

  1. Preheat oven to 325 degrees. Place a sheet of parchment on a large cookie sheet. 

  1. In a large bowl combine all of the dry ingredients and mix well. 

  1. Add the wet ingredients to the dry. After a minute of stirring use your hands to knead to dough so that it comes together into a uniform ball of dough that holds together well. 

  1. Roll this dough out between two sheets of parchment to about ¼ inch thick and use cookie cutters to cut into shapes of your choice.  Re-roll out dough and cut until all of your cookie dough is gone. 

  1. Place all of the cookies on the lined baking sheet and bake for 10-12 minutes. Remove from oven and allow to cool before removing from cookie sheet. Yields 2 large cookie sheets of cookies.

Snickerdoodle Cookies

¾ cup coconut flour (126g) 

¾ cup tapioca or arrowroot starch (132g) 

1 cup Organic Cane Sugar, Granulated Honey or Xylitol (160g) 

2 tsp baking powder 

1 tsp ground cinnamon 

¼ tsp sea salt 

1 cup palm shortening (192g) 

5 tbsp unsweetened applesauce (75g) 

1 tbsp vanilla extract 

For Topping: 

1 tsp ground cinnamon 

¼ cup coconut palm sugar, granulated honey or xylitol  

 

  1. Preheat oven to 325 degrees and line a large baking sheet with parchment paper. 

  1. In a large stand mixer bowl, combine the coconut flour, tapioca starch, sugar, baking powder, cinnamon and salt on low speed. Cut in the shortening starting on low speed and increasing to medium speed for about 2 minutes. 

  1. Add the vanilla and applesauce and mix on medium high speed for an additional 1-2 minutes. 

  1. Roll dough into 2 inch balls, about 2 heaping tablespoons worth, and roll into the cinnamon sugar topping mixture and place on parchment lined cookie sheet. Flatten each ball with the palm of your hand until about 1/4 inch thick. 

  1. Bake for 15 minutes or until golden brown. Allow the cookies to cool COMPLETELY before removing from the cookie sheet or they will crumble into a million pieces!

Peanut Butter Kiss Cookies  

1 cup blanched almond flour (144g) 

1/2 cup coconut palm sugar or xylitol (80g) 

1/2 tsp baking powder 

1/2 cup peanut butter or almond butter (123g) 

2 tbsp butter or palm shortening (28g) 

1 tbsp unsweetened applesauce (15g) 

1 tsp vanilla extract 

12 store bought chocolate kisses or homemade dairy free kisses (see next recipe)

 

  1. Preheat oven to 350 and line a large baking sheet with parchment paper. 

  1. In a mixing bowl, combine all of the ingredients until it forms a dough. 

  1. Roll out about 1 tbsp worth of dough between your hands and flatten slightly. 

  1. Bake for 9- 10 minutes and as soon as you remove from the oven- use your thumb to create the thumbprint. 

  1. If using my dairy free- hershey kiss recipe below, let the cookies cool just a tiny bit before adding the kisses. If using store bought chocolate kisses then go ahead and place the kisses in right away. 

 

Dairy Free Chocolate Kisses 

Combine 2 cups enjoy life chocolate chips and ½ cup heavy cream or coconut cream in a double boiler and melt.  Once melted place in the fridge for 5-10 minutes.  Check periodically and stir; You will want a thickened consistency but watch closely. it makes a transition from wet to hard very quickly- if this happens place in the microwave for 10-15 seconds until it starts to melt again.  Place the ganache into a piping bag and create little swirls to make your kisses. Let sit until they harden.

Oatmeal Raisin Cookies

1 cup coconut palm sugar (160g) 

5 tbsp butter or coconut oil, melted (70g) 

5 tbsp dairy or non-dairy milk (70g) 

2 tbsp honey (36g) 

1 tsp vanilla extract 

1 ½ cups gluten free oats or quinoa flakes (156g) 

¾ cup blanched almond flour (108g) 

¾ cup tapioca starch (99g) 

1 tsp xanthan gum 

1 tsp ground cinnamon 

½ tsp sea salt 

½ cup raisins 

  1. Preheat oven to 325 degrees and line a large baking sheet with parchment paper. 

  1. In a stand mixer combine the sugar, melted butter/oil, milk, honey and vanilla extract; mix to combine.  Then add the oats/flakes, almond flour, tapioca, xanthan, cinnamon and sea salt.  Once well combined fold in the raisins. 

  1. Oil your hands, as this dough is very sticky to work with. Taking 2 tbsp worth of dough at a time shape into balls and flatten slightly. 

  1. Place on baking sheet, and cook for 15-16 minutes.

Dairy Free: yes if non-dairy milk and coconut oil are used

Copycat Toll House Chocolate Chip Cookies 

1 cup butter, softened (224g)  Dairy or Nondairy.

¾ cup coconut palm sugar (120g)  OR Classic Brown Sugar (Cookies spread best using it)

¾ cup organic cane sugar (120g) 

1 tsp vanilla extract 

2 large eggs 

2 ¼ cup Nut Free all purpose flour (326g) 

1 tsp baking powder 

1 tsp sea salt 

1-10 oz package enjoy life chocolate chips 

 

  1. Preheat oven to 350 degrees and line a large baking sheet with parchment paper. 

  1. In a large bowl for a stand mixer cream together the butter, both sugars and vanilla extract until creamy on medium speed.  Add the eggs one at a time until fully incorporated. 

  1. In a separate bowl combine the flour, baking powder and sea salt and gradually add to the wet ingredients.  Fold in the chocolate chips by hand. 

  1. Using a small cookie scoop or about 2 tbsp worth of dough, drop onto the prepared baking sheet and flatten to about ½ inch thick.  Place into oven and bake for 8-9 minutes.  Remove from oven and allow to cool for 20 minutes before removing.

Raspberry Walnut Thumbprint Cookies 

 2 cups blanched almond flour (288g) 

½ cup coconut palm sugar or organic cane sugar or xylitol (80g) 

2 tbsp tapioca starch (16g) 

2 tsp baking powder  

⅛ tsp sea salt 

¼ cup honey (72g) 

2 ½ tbsp butter or coconut oil, melted (38g) 

1 ½ tbsp dairy or non-dairy milk (21g) 

1 tbsp vanilla extract 

 

For the outside 

½ cup finely chopped walnuts 

2 tbsp dairy or non-dairy milk 

¼ cup raspberry preserves (1 tsp/cookie) 

 

  1. Preheat oven to 350 degrees and line a large baking sheet with parchment paper. 

  1. In a large bowl for a stand mixer combine the almond flour, sugar, tapioca, baking powder, salt, honey, butter/oil, milk and vanilla on medium speed until large balls of dough form.  Continue to work the dough with your hands until you can form one large ball. 

  1. Place the walnuts and milk for the outside of the cookies into to two separate small bowls. 

  1. Using a small cookie scoop or two tbsp worth of dough, roll into a ball between your hands, place the dough ball into the bowl with milk to coat then roll into the bowl with walnuts.  Using your thumb create a depression into the cookie.  Spoon 1 tsp worth of the raspberry preserves into the depression and place onto the prepared baking sheet, repeat with remaining dough. 

  1. Place sheet into the oven and bake for 10-12 minutes.  Remove from oven and allow to cool for 20 minutes before removing from sheet.

Classic Shortbread Cookies

⅓ cup coconut palm sugar or granulated honey or organic cane sugar (53g) 

3 tbsp butter, softened (42g) 

1 ½ tbsp unsweetened applesauce (23g) 

1 tbsp vanilla extract 

2 cups blanched almond flour (188g) 

1 tbsp tapioca starch (8g) 

¼ tsp baking soda 

⅛ tsp sea salt 

 

  1. Preheat oven to 350 degrees and line a large baking sheet with parchment paper. 

  1. In a large bowl for a stand mixer cream together the butter, sugar, applesauce and vanilla extract until creamy on medium speed.   

  1. In a separate bowl combine the almond flour, tapioca, baking soda and salt and gradually add to the wet mixture.  Mix on medium speed until dough forms, you may need to combine with your hands at the end to form one large ball. 

  1. Roll out the dough between two pieces of parchment paper to ¼ inch thickness.  Use a round cookie cutter and cut out the dough.   

  1. Place onto the prepared baking sheet and place into oven for 10-12 minutes.  Remove and allow to cool completely before transferring.

Pumpkin Chocolate Chip Cookies

1 cup pumpkin puree (232g) 

1 cup coconut palm sugar (160g) 

½ cup coconut oil, melted (110g) 

1 tbsp vanilla extract 

1 tsp dairy or non-dairy milk 

1 large egg 

2 cups Nut Free Baking Blend (290g) 

2 tsp baking powder 

2 tsp ground cinnamon 

1 tsp baking soda 

½ tsp sea salt 

1-10 oz bag enjoy life chocolate chips 

 

  1. Preheat oven to 350 degrees and line a large baking sheet with parchment paper. 

  1. In a large bowl for a stand mixer cream together the pumpkin, sugar, oil, vanilla and milk until creamy on medium speed.  Add the egg and mix until fluffy. 

  1. In a separate bowl combine the flour, baking powder, cinnamon, baking soda and salt and gradually add to the wet ingredients.  Mix on medium until well combined.  Fold in the chocolate chips by hand. 

  1. Using a small cookie scoop or two tbsp worth of dough, drop onto the prepared baking sheet, flatten to about ½ inch - ¾ inch thickness and place into oven for 13 minutes.  Remove and allow to cool completely before transferring.
