Grain Free Fried Hush Puppies. (Gluten. Nut & Dairy Free)
Grain Free Hush Puppies? Oh yes! You wont miss the corn, I promise. Serve them with your favorite chili recipe! They come together much quicker and easier than you may anticipate. Please use the gram measurements for the very best results and avoid making substitutions. I spent a lot of time getting them just right- making changes could result in a failed recipe.
Yield: Around 36 hush puppies
¾ cup of spectrum shortening (124 grams)
¼ cup of honey (72 grams)
3 large eggs
¾ cup of coconut flour (126 grams)
½ cup of potato starch (88 grams)
½ cup of tapioca starch (66 grams)
1 Tbsp of Baking Powder
1 Tsp xanthan or Guar gum
1 Tsp salt
3 Tbsp Water (42 grams)
1/8 Tsp of Cayenne
½ Tsp of Black Pepper
1 Tsp Chili Powder
1 Tbsp of Lemon Juice or Vinegar (14 grams)
Optional Add in: 1-2 jalapenos seeded and finely chopped.
1. Mix all of the ingredients in a mixing bowl using the whisk attachment until smooth.
2. Heat 2 inches of oil to 365 degrees F (185 degrees C).
3. Drop batter by heaping tablespoon in hot oil, and fry until golden brown.
4. Cook in small batches to maintain oil temperature. Drain briefly on paper towels. Serve right away. Store leftover in the fridge in a sealed containter for up to 3 days.
