Perfect Homemade Fries! (Salt & Vinegar/ Garlic Parsley Parm/ Chili Lime & Cilantro /Rosemary Pepper)

I had an absolute blast coming up with these French fry flavors and they all turned out incredible. I highly recommend buying a De Buyer Mandoline.  It has a safety hand guard and creates waffle, straight and julienne cuts.Which, I took full advantage of when making these fries. The secret to perfectly crispy fries is soaking them in ice water for at least an hour! Sometimes I put them in water in the fridge as long as overnight. Taking the time to do this step really makes a huge difference in the end result. Additionally, do your best to keep the size of your French fries consistent as this will make baking them easier allowing them to all finish around the same time. 

 

Salt and Vinegar Fries

Slice (into whatever shape you want),4 medium sized potatoes or white sweet potatoes.(peeling the skin is optional). Place in iced waterfor 1-2 hours. Then dry completely with paper towels. Pour into a bowl and toss liberally with ½ cup of oil (Melted Duck Fat, Lard, or Avocado oil)Then add ¼ cup of superfine rice flour(optional- it adds crispiness) 1 ¼ tsp of salt, ½ tsp of black pepper, 1/8 tsp of cayenneand toss until evenly coated. Divide between two baking sheets and bake at 450 degrees 24-30 minutes- rotating the pans once. Once they are crispy remove from oven- brush with up to 2 tbsp of Apple Cider Vinegarand sprinkle with salt. Serve immediately.

 

Garlic Parsley Parmesan Fries

Slice (into whatever shape you want),4 medium sized potatoes or white sweet potatoes.(peeling the skin is optional). Place in iced waterfor 1-2 hours. Then dry completely with paper towels. Pour into a bowl and toss liberally with ½ cup of oil (Melted Duck Fat, Lard, or Avocado oil)Then add ¼ cup of superfine rice flour(optional- it adds crispiness) 1 ¼ tsp of salt, ½ tsp of black pepper,1 tsp of garlic powder, 3 tbsp offresh minced parsley, 1/3 cup ofparmesan and toss to evenly coat. Divide between two baking sheets and bake at 450 degrees 24-30 minutes- rotating the pans once. Once they are crispy remove from oven and garnish with additional parsley, parmesan cheese and a sprinkle of salt. Serve immediately.

 

 

Chili Lime & Cilantro Sweet Potato Fries

Slice (into whatever shape you want),sweet potatoes or white sweet potatoes.(peel the skin is using orange sweet potatoes) Place in iced waterfor 1-2 hours. Then dry completely with paper towels. Pour into a bowl and toss liberally with ½ cup of oil (Melted Duck Fat, Lard, or Avocado oil)Then add ¼ cup of superfine rice flour(optional- it adds crispiness) 1 ¼ tsp of salt, 1 tbsp of chili powder, zest of 1lime, and 3 tbsp of mincedfresh cilantroand toss to evenly coat. Divide between two baking sheets and bake at 450 degrees 24-30 minutes- rotating the pans once. Once they are crispy remove from oven and garnish with additional cilantro, lime zest and salt. Serve immediately.

 

 

Rosemary Pepper Parsnip Fries

Slice (into whatever shape you want) 8-10 large parsnips. (Spiralizing them is another fun option which is quick to do!) ). Place in iced waterfor 1-2 hours. Then dry completely with paper towels. Pour into a bowl and toss liberally with  ½ cup of oil (Melted Duck Fat, Lard, or Avocado oil) Then add ¼ cup of superfine rice flour (optional- it adds crispiness) 1 ¼ tsp of salt, ½ tsp of black pepper, and 1 tbsp of ground up dried rosemary. . Divide between two baking sheets and bake at 450 degrees 22-28 minutes- rotating the pans once. Once they are crispy remove from oven and garnish with additional salt and pepper. Serve immediately.

Low Carb: no, except the parsnip fries without rice flour.

Aip Friendly: Using sweet potatos, or parsnips and omit cheese and red pepper or chili powder.
