Party Meatball Recipes! Two Flavors: Santa Fe + Sweet & Sour! Gluten/Grain/Egg Free

Meatballs seem to be everyone’s essential go to party food.  The only thing that makes a meatball better is when it is mini and bursting with both traditional and some non traditional flavor combinations.  You will wow your guest with this mini meatball spread at your next get together and everyone will be begging for your recipes!

Santa Fe Meatballs

Yield:  8 meatballs

 

In a large mixing bowl combine ½ lb ground beef, ¼ cup + 2 tbsp blanched almond flour OR 1 egg, 2 tbsp grated fresh onion, ½ tsp sea salt, ½ tsp black pepper and 1 tsp garlic powder until well incorporated.  Fold in 1 small finely diced jalapeno, ¼ of a finely diced green bell pepper and ¼ of a finely diced red bell pepper.  Divide meat into 12 equal size portions and form into balls.  Place onto a parchment lined baking sheet and place into a preheated 375 degree oven and bake for 15 minutes.  They can also be pan fried in a skillet with 2 tbsp of oil over medium heat for 6-8 minutes. Store in a container in the fridge for up to 3 days.

Sweet and Sour Meatballs

Yield:  8 meatballs

In a large mixing bowl combine ½ lb ground beef, ¼ cup + 2 tbsp blanched almond flour OR 1 egg, ¼ cup drained crushed pineapple, 2 tbsp grated fresh onion, ½ tsp sea salt, ½ tsp black pepper, ½ tsp garlic powder, ¼ tsp ground ginger, ¼ tsp mustard powder and ¼ tsp ground cinnamon until well incorporated.  Divide meat into 12 equal size portions and form into balls.  Place onto a parchment lined baking sheet and place into a preheated 375 degree oven and bake for 15 minutes.  They can also be pan fried in a skillet with 2 tbsp of oil over medium heat for 6-8 minutes.  While the meatballs are cooking, in a blender combine ½ cup drained crushed pineapple, ⅓ cup tomato paste, 1 cup water, ⅓ cup apple cider vinegar, ½ cup coconut palm sugar, 1 ½ tbsp tapioca starch, ½ tsp sea saltand ½ tsp black pepperand blend until smooth, transfer to a medium sauce pan over medium heat and cook for 10-15 minutes until heated through. Toss cooked meatballs in prepared sweet and sour sauce before serving. Store in a container in the fridge for up to 3 days.
