Funfetti Cookie Cake (Gluten/Grain/Egg/Dairy Nut Free)

I don’t know about you guys but I have two favorite desserts: Cookies and Cake!

Traditionally cookie cakes are made as one large cookie (which you can absolutely do with this recipe too!) but I wanted to have a little fun and stack giant cookies into a cake for a small crowd!

The sprinkles are optional! But they sure do make the it look more fun! :)

This recipe is Gluten Free, Grain Free, Egg Free Dairy Free AND nut free!

Funfetti Cookie Cake (Gluten/Grain/Egg/Dairy Nut Free)

Cookie layers:

·      126g coconut flour

·      120g tapioca starch/flour

·      3 tsp baking powder

·      3/4 tsp sea salt

·      210g butter/spectrum shortening (room temperature)

·      45g applesauce

·      3/4 cup dairy or nondairy milk

·      120g organic cane sugar

·      3 tsp vanilla extract

·      3 tbsp rainbow sprinkles

Buttercream frosting:

·      12 tbsp butter (dairy or nondairy) (room temperature)

·      2 1/4 cup powdered cane sugar

·      1/2 tsp vanilla extract

·      4 tbsp spectrum shortening

·      2 tbsp water/dairy or nondairy milk

·      Food coloring (optional)

  

Instructions

1.    Preheat oven to 350. Line three 7" springform pans with parchment paper.

2.    In the bowl of a stand mixer, using the whisk attachment (or by hand in a mixing bowl), mix the tapioca flour, coconut flour, baking powder, and salt until blended. Add the rest of the ingredients and mix until combined.

3.    The batter will be very thick. Scoop evenly into the springform pans, weighing them to make sure they are even. Smooth the top of the batter with a rubber spatula because the batter will not smooth itself out in the oven or change shape.

4.    Bake for 29 minutes until the edges of the cookies are slightly golden. The cookies will not look or feel done, but they will harden as they cool. Let them cool completely in the pan.

5.    While the cookies are baking, make the frosting. Mix all the ingredients together with a hand mixer until thick and blended. Decorate cake as desired and store extra frosting in the refrigerator.
