Banana Cake with Coconut Cream Cheese Frosting & Salted Caramel (Gluten Free. Egg Free, Nut Free, Coconut Free, Dairy Free & Vegan)

Another Gluten, Dairy & Egg Free Cake! It is Vegan by default too! :)

The flavor is great- the ingredients are pretty simple and the results are pretty! I added some banana chips on top which is totally optional. This is a great option if you aren’t in the mood to spend hours decorating a cake. Its perfect as a birthday cake or any special occasion dessert.

Banana Cake with Coconut Cream Cheese Frosting and Salted Caramel

·      3 Very Ripe Bananas

·      1/2 cup Unsweetened Applesauce (if your banana is not super ripe add 1-2 TBSP of additional applesauce)

·      1 TBSP Vanilla Extract

·      1/3 cup Butter, dairy or non dairy, room temperature

·      1 TBSP Lemon Juice

·      1/2 cup Organic Cane Sugar

·      2 1/4 cup Rice Flour (360g)

·      2 tsp Baking Powder

·      1/4 tsp Salt

Coconut Cream Cheese Frosting

·      1/2 cup Coconut Manna or Coconut Butter

·      1 can Chilled Coconut Milk, cream skimmed off the top, discard water

·      3/4 cup Powdered Sugar

·      1/4 tsp Salt

·      1 1/2 tsp Lemon Juice

·      1 TBSP Vanilla Extract

·      4 TBSP Vegetable Shortening

Salted Caramel (optional, omit if you are dairy free)

·      6 TBSP Butter

·      1/2 cup + 2 TBSP Palm Sugar

·      1/2 TBSP Heavy Cream

·      Pinch of Salt

Instructions

Banana Cake

1.    Preheat oven to 350 degrees and line an 8x8 or 9x9 pan with parchment paper.

2.    In a large bowl for a stand mixer combine the bananas, applesauce, vanilla, butter, lemon juice and milk and mix together on medium speed until well combined.

3.    In a separate medium size bowl combine the sugar, rice flour, baking powder and salt. Gradually add the dry mixture to the wet ingredients on medium speed. Mix until well combined.

4.    Pour the batter into the parchment lined pan. Bake for 43-45 minutes or until toothpick inserted into the center of the cake comes out clean. Allow to cool completely before frosting!

Coconut Cream Cheese Frosting

5.    In a microwave safe bowl combine the coconut manna/butter, coconut cream, sugar, salt, lemon juice, vanilla and vegetable shortening.

6.    Melt in the microwave for 30 seconds-1 minute, then place in fridge until chilled and thick.

7.    Once chilled, rewhip and allow to sit out for 15 minutes before frosting the cake.

8.    Spread a thick layer on top of the cake once it is cooled.

Salted Caramel

9.    In a small saucepan over medium to medium high heat combine the butter, palm sugar, heavy cream and salt. Stir continually until the ingredients come together and begin to slowly boil. Cook until the mixture thickens, about 3 minutes.

10.  Drizzle the hot caramel over the frosted cake, as much or as little as desired. Arrange banana chips in the center of the cake for a pretty effect and enjoy!

 

*IF Dairy Free Isn’t something you need to worry about-you can just make this traditional cream cheese frosting recipe instead!

Traditional Cream cheese frosting

4 ounces of Salted Butter

4 Ounces of Cream Cheese (1 package)

2 cups of POWDERED Honey (I buy it on amazon)

1-2 Tsp. Vanilla Extract.

Beat those ingredients together and spread on top of the cake!
