Keto Pumpkin Pancakes (Low Carb/Grain Free/Sugar Free/Nut Free)
Trying to watch your eating? But you're still a pumpkin fanatic? This recipe has your name ALLL over it. You'll have a guilt free low carb, keto and Sugar Free breakfast of champions that also happens to be festive to boot!
6 Large Eggs
6 Tbsp Oil (Mild tasting such as Avocado, Grapseed or Canola)
6 Tbsp Coconut Flour
5 Tbsp Canned Pumpkin
1 1/2 Tsp Pumpkin Pie Spice
1/2 Tsp Baking Powder
1 Tsp Vanilla Extract
4 Tbsp Xylitol or Erythritol (Or swerve)
1/2 Tsp Xanthan or Guar Gum
Add to the blender the eggs and oil. Process on high until frothy. Add all the remaining ingredients and process until smooth.
Cook in a nonstick or well seasoned skilled with a little oil over medium heat. (They will cook best if made silver dollar sized.. low carb tends to take longer to cook so if they are this size they will cook faster and flip easier!)
