Grain Free Meatball Sub Pizza! (Gluten/Egg/Coconut Free)

Think of a meatball sub deconstructed into pizza. I started with a delicious egg free flatbread crust then added meatballs, red sauce cheese! Its pretty simple to make- thanks to the use of a casserole dish. Just load everything up and bake it! This pizza freezes really well too!

Preheat oven to 375 degrees. Oil a 10 inch oval casserole dish and set aside. Make the crust: In a bowl mix together (86 grams) 1 ¼ cup of blanched almond flour, ¾ cup + (115 grams) 2 Tbsp of Tapioca Starch, 2 ½ Tsp of Xanthan or Guar Gum, 1 Tsp of Garlic Powder, 1 Tbsp of Baking Powder, ½ Tsp of Salt and (248 grams) 1 cup + 2 Tbsp Water and 1 Tbsp Vinegar. Mix until the dough comes together and spread it into the casserole dish and set aside.

Make the sausage meatballs. Combine 1 lb of ground Italian sausage (sweet or spicy) 1 onion grated, (33 grams) ¼ cup of blanched almond flour, ½ tsp of salt, 1 tsp of garlic powder and ½ tsp of black pepper. Form into 16- ½ Tbsp sized meatballs.

Place about 1 ½ cup of pizza sauce on top of the pizza crust. Evenly place the meatballs on top and then top with 1 ½ cups of mozzarella cheese. Place into the oven and bake uncovered for 20 minutes. Then cover and bake another 30 minutes. Remove from oven- serve warm. Leftovers can be stored in the fridge for up to 3 days.
