Pumpkin Spice Twinkies! (gluten,grain,nut,dairy free and paleo)

Remember a few years back when they stopped making twinkies for whatever crazy reason, and everyone started stockpiling them?  I was tempted to join the crowd but then I remembered twinkies have a shelf life of a million years so I decided to skip that and make my own cleaned up version.  And you guys went crazy over them!  So I wanted to bring those back with a seasonal twist with, you guessed it... PUMPKIN!  These are super delicious and surprisingly easy to make, so go for it and indulge a bit this weekeend!

Pumpkin Spice Twinkies! (gluten,grain,nut,dairy free and paleo)


  • 4 large eggs

  • 61g pumpkin puree (1/4 cup)

  • 55g dairy or non dairy milk (1/4 cup)

  • 44g melted butter or coconut oil (3 tbsp)

  • 1 tsp lemon juice

  • 110g coconut palm sugar (1/2 cup)

  • 86g tapioca starch (1/2 cup)

  • 72 g coconut flour (1/2 cup)

  • 1 tbsp baking powder

  • 1 1/2 tsp pumpkin pie spice

  • 1/8 tsp salt

  • filling

  • 5 tbsp cold water

  • 1 tbsp gelatin

  • 1/2 cup honey or maple syrup

  • 1/2 tsp pumpkin pie spice

  • pinch of sea salt

  • orange food coloring (optional)


  1. Preheat oven to 350 degrees and liberally oil a twinkie pan.

  2. Whip the eggs in a large bowl until frothy, about 1-2 minutes.

  3. Combine the remaining twinkie ingredients in a seperate large bowl until well commbined, then stir in the eggs. 

  4. Spoon the batter into the prepared pan, filling each cup 3/4 full. Place into oven and bake for 28 minutes. Remove from oven and allow to cool completely before hollowing out each twinkie with a long toothpick. Be sure not to completely pierce the entire twinkie!

  5. While the twinkies bake prepare the filling by combining the water and gelatin in a small bowl and placing into the microwave for 30 seconds. Whip the prepared gelatin, honey/maple, pumpkin pie spice, salt and food coloring in a stand mixer with a whisk attachment on high for about 8-10 minutes or until fluffy.

  6. Place the filling into a pastry bag or zipper bag and snip off the end/corner. Hold the hollowed out twinkie steady and insert tip of the bag and gently squeeze the filling into the twinkie. You will be able to feel when it is full. Repeat with remaining twinkies.
