No Bake Grain Free Pumpkin Cookie Dough!
Sometimes you need to just make raw cookie dough to EAT. And that is exactly the purpose of this recipe. Don't try baking the cookie dough as I have no idea what will happen! If you want BAKED pumpkin chocolate cookies- make THIS recipe instead (click on this link)
But as far as this cookie dough goes- make a batch. Roll it into balls and keep it in the freezer in a container. Then pull it out as you want some.
Pumpkin Chocolate Chip Cookie Dough
1/4 cup of Coconut Flour
1/4 Cup + 2 Tbsp Potato, Tapioca or Arrowroot Starch.
6 Tbsp of Butter or Shortening (Butter will yield the best flavor)
1 tsp. Vanilla Extract
6 Tbsp Granulated Sugar (Organic Cane, Xylitol for sugar free, Granulated Honey or Palm Sugar)
3-4 Tbsp of Canned Pumpkin Puree
1/2 tsp salt
2 1/2 Tsp. Pumpkin Spice
3 Tbsp Chocolate Chip (enjoy life for dairy free or use Cocoa Nibs for Sugar Free)
Mix all ingredients together in a bowl! I like to form the dough into balls and then store them in the freezer for a quick treat! Please note this recipe is not intended for baking purposes!
