Low Carb Harvest Style Bangers and Mash! (gluten,grain,egg,nut,dairy free, low carb & paleo)
Simple, Easy and Delicious. Roasting butternut squash before mashing gives is the BEST flavor, and the texture made this way allows them to be as thick as classic mashed potatoes- except I like them more! PLUS they are much lower carb for those wanting to watch their carbs.
We doused our harvest bangers and mash with butter, but you may consider making my Paleo Pumpkin Gravy to go with them too. Either option is a good one.
Harvest Style Bangers and Mash!
12 cups butternut squash, cubed
4 tbsp melted coconut oil
1 tsp sea salt
1 tsp black pepper
1 tsp nutmeg
¼ cup butter
1/8 tsp dried sage
1 lb sausage links, about 4 links (whatever your favorite is!)
Preheat oven to 450 degrees and line a large baking sheet with parchment paper. Spread the butternut squash in an even layer on the prepared baking sheet, toss with the melted coconut oil, salt and pepper until coated evenly. Place into oven and roast for 1 hour.
Reduce oven heat to 425 degrees and place the sausages onto a parchment lined pan and roast for 18-20 minutes or until cooked through.
Place roasted squash into a large bowl with the butter and puree with an immersion blender until smooth.
Serve the roasted sausage alongside the squash puree.
To make drunken bangers and mash, rather than roasting the sausages you can boil them in 4 cups (2 bottles) of hard cider!
