One Pot Chicken with Bacon & Apples!
· 1/2 lb bacon, chopped
· 1 lb chicken thighs
· 3/4 tsp sea salt
· 1/2 tsp black pepper
· 1/2 tsp dried rosemary
· 1/2 tsp ground cinnamon
· 4 small apples, cubed
· 2 tbsp lemon juice
1. In a large skillet over medium high heat cook the bacon for 3 minutes until some fat is rendered.
2. To the skillet add the chicken, salt, pepper, rosemary and cinnamon. Cook the chicken on the first side for about 4 minutes.
3. Flip and add the apples and lemon juice to the pan. Continue to cook until the apples are softened and the chicken is cooked through, about 7-9 minutes.
