Sweet Potato, Apple, Squash & Bacon Harvest Hash!
Ingredients
· 4 cups butternut squash, peeled and diced
· 4 cups sweet potato, peeled and diced
· 2 tbsp avocado or coconut oil
· 1 tsp sea salt
· 1 tsp black pepper
· 1/2 lb bacon, chopped
· 1 large shallot
· 2 large apples, peeled and diced
· 1/2 tsp sea salt
· 1/2 tsp black pepper
· 1/2 tsp dried thyme
· 4 fresh sage leaves, chopped
Instructions
1. Preheat oven to 450 degrees and line a large baking sheet with parchment paper. Spread the squash and sweet potato in an even layer on the parchment lined sheet. Drizzle with the oil and sprinkle the salt and pepper over the top and toss with hands to coat. Place into oven and allow to roast for 40-45 minutes, flipping halfway through. Remove from oven and set aside.
2. While the vegetables roast, place the bacon into a large skillet over medium high heat and cook for 6 minutes or until crispy.
3. Add the shallot to the skillet of bacon and reduce heat to medium low, cook shallots for 3 minutes then add the apples and cook for an additional 5 minutes or until the apples have softened.
4. Reduce the heat to low and stir into the skillet the remaining ingredients.
5. Once the vegetables are done roasting, remove them from the oven and immediately add them to the skillet. Carefully fold all of the ingredients together until they're well incorporated, remove from heat and serve immediately, preferably right from the skillet!
