If you’re looking for recipes that are EASY that you can make ahead to keep your eating on track look no further! Each recipe is bursting with flavor. They are perfect to grab from the fridge to eat in the car on a busy morning! They make keto easier.. which is a huge win in my book. When you’re busy and hungry it can be hard to stay on track- keeping a batch of these in the fridge really helps.

Making one batch takes minutes to throw together and you can keep them in the fridge for several days (or throw them in a lunch box for a healthy meal away from home!) They taste good warm or cold. To make this recipe you will need a muffin tray with 6 muffin holders (You can use a small pan or a just only fill a larger one halfway) feel free to double the recipes if you wish to make 12 and fill one tray. 

 Yield: 6 frittata cups/ 6 servings per recipe

 

Pizza Frittata Cups

Preheat oven to 350 degrees. Lightly grease 6 spots in your muffin tin. Set aside. In a bowl liberally whisk 4 large eggs until frothy then stir in ½ cup of mozzarella cheese, ¼ cup chopped pepperoni, ½ of a small onion diced,  3 Tbsp of tomato sauce, ¼ tsp of dried parsley, ¼ tsp of garlic powder, ¼ tsp of dried basil and ¼ tsp of salt. Pour into the prepared cups and bake40-45 minutes on the middle rack in the oven until puffy and cooked through. Store in the fridge up to 3 days, or freeze in a sealed container for another day.

Corned Beef Hash Frittata Cups

 Preheat oven to 350 degrees. Lightly grease 6 spots in your muffin tin. Set aside. In a bowl liberally whisk 4 large eggs until frothy then stir in ½ a small onion, diced. ½ cup of cooked and chopped corned beef,½ cup of mozzarella, ¼ cup of chopped potatoes, ½ tsp  garlic powder and 1/8 tsp of black pepper. Pour into the prepared cups and bake40-45 minutes on the middle rack in the oven until puffy and cooked through. Store in the fridge up to 3 days, or freeze in a sealed container for another day

Taco Frittata Cups

Preheat oven to 350 degrees. Lightly grease 6 spots in your muffin tin. Set aside. In a bowl liberally whisk 4 large eggs until frothy then stir in ½ a small onion, diced. 1/8 tsp cumin, ¼ tsp salt, ¼ tsp chili powder, ¼ tsp garlic powder, pinch of cayenne,½ cup of cooked or raw ground beef, ½ cup of chopped bell peppers and ½ cup of shredded cheddar cheese. Pour into the prepared cups and bake40-45 minutes on the middle rack in the oven until puffy and cooked through. Store in the fridge up to 3 days, or freeze in a sealed container for another day.

Greek Style Frittata Cups

Preheat oven to 350 degrees. Lightly grease 6 spots in your muffin tin. Set aside. In a bowl liberally whisk 4 large eggs until frothy then stir in ½ a small onion, diced.1/3 cup of feta cheese, ¼ cup chopped olives, ½ cup diced bell pepper (optional) ¼ tsp of dried oregano, ¼ tsp of garlic powder, ¼ tsp of salt, 2 tsp Lemon Zest, 1 Tbsp Olive oil. Pour into the prepared cups and bake 40-45 minutes on the middle rack in the oven until puffy and cooked through. Store in the fridge up to 3 days, or freeze in a sealed container for another day.
