The BEST meatloaf! 2 flavors: Salisbury Steak / Summer Veggie Balsamic Meatloaf. (Paleo, Keto , AIP , Gluten Free, Grain Free)

Meatloaf:  This classic comfort food has met its match with these two new versions of the old standby! Think that meatloaf is only for cold winter nights?  My new Summer Veggie Balsamic Meatloaf will have you rethinking that!  Savory salisbury steak comes to you in meatloaf form with my other new spin, so either way you’re guaranteed some new and different flavors!

Both recipes are naturally gluten free, Grain Free, Paleo, Dairy free, Egg Free and have notes on how to Make them Low Carb/ Keto!

Yield 1- 9x5 pan each.

Salisbury Steak Meatloaf: 

This meatloaf is COMFORTING. I’m not even a mushroom person and I still love it. Changing things up a little can make an old “boring” thing like meatloaf really enjoyable. If you don’t have Cassava flour you can swap it out for 1/3 cup of blanched almond flour.

In a small skillet over low heat melt 1 tbsp butter or ghee and to the pan add 1 small finely chopped onion and cook until soft and translucent, about 15 minutes. Once the onions are caramelized add to the skillet 2 tsp cassava flour, ¼ tsp garlic powder, ⅛ tsp sea salt and ⅛ tsp black pepper and stir to coat the onions.  To the skillet add ½ cup + 3 tbsp beef broth, stir and increase the heat to medium.  Continue to stir until the mixture begins to thicken, about 1 minute. Remove from heat and set aside. Pre heat oven to 350 degrees and melt 2 tbsp butter or gheein a large skillet over medium heat.  To the skillet add 1 diced onion and 3 minced garlic cloves and cook for 3 minutes and then add 8 oz of chopped white mushrooms, 1 tsp sea salt, 1 tsp black pepper, ½ tsp onion powder and ¼ tsp dried thyme and cook until soft, an additional 3 minutes.  In a bowl combine 2 tsp balsamic vinegar, 1 tsp tomato paste and 1 lb ground beef until incorporated.  To the bowl add the cooked onions and mushrooms and fold into the ground meat until evenly distributed.  Place meatloaf mixture into a 9x5 inch loaf pan and press evenly into the pan.  Place into the oven and bake for 35 minutes. Allow to cool for 10 minutes before slicing.  You can cover the entire loaf with the prepared gravy or top each individual piece.

Summer Veggie Balsamic Meatloaf:

 Note: This meatloaf can be made with any ground meat (chicken/turkey/pork/beef). I prefer it with Ground Turkey or Chicken. That allows the other flavors of the meatloaf to really shine! This recipe is REALLY delicious. Like really, extremely good. I could eat it every day!!

Preheat oven to 425 degrees. In a large skillet over medium heat melt 2 tbsp butter or ghee and to the pan add 1 finely diced green zucchini, 1 finely diced yellow squash and ½ finely diced red, orange and yellow bell peppers and cook for 3 minutes.  Add to the pan 3 minced garlic cloves, 1 tsp sea salt, 1 tsp black pepper, 1 tsp dried rosemary, 1 tsp dried basil, ½ tsp dried thyme, ½ tsp onion powder and ½ tsp red pepper flakes, cook for an additional 3 minutes then remove from heat. In a large bowl combine 1 lb ground chicken or turkey, ½ cup nutritional yeast, ⅓ cup organic ketchup, 1 tbsp balsamic vinegar and ½ cup cassava flour until well incorporated, evenly fold the veggies in. Place into a 9x5 inch loaf pan. In a small bowl whisk to combine ¼ cup organic ketchup and ¼ cup balsamic vinegar, pour over the prepared meatloaf. Place in the oven and bake for 60 minutes.  Allow to sit for 15 minutes before slicing and serving.

Low Carb:  to make low carb swap the cassava flour for 1 cup of blanched almond flour.

Sugar Free:  Use sugar free ketchup instead of regular ketchup (now sold in most stores).

Aip Friendly:  yes, if ghee is used and peppers, red pepper flakes and ketchup are omitted.

Keto: to make keto swap the cassava flour for 1 cup of blanched almond flour. Use sugar free ketchup instead of regular ketchup (now sold in most stores).
