4 Delicious & Simple to make Mason Jar Salad Recipes! (Keto/ AIP/ Paleo/ Gluten & Grain Free)

Have you ever made yourself a beautiful salad in the morning before work and come lunch time it is in a soggy heap at the bottom of its container? I hate that!  The best solution in my mind is a mason jar salad!  The ingredients are layered in the  jar wet to dry to ensure your lettuce and other toppings stay crisp and fresh.  When its time to eat just shake and enjoy! Of course you don’t have to stick to the season that goes with each salad- I was just inspired by the vegetables that are easiest to find every season! You also can make these recipes in a bowl and serve it right away!

Yield : 2 Servings Each Recipe

 

Spring Salad with Lemon Mint Vinaigrette

 

In a small food processor add 1/3 cup fresh lemon juice, 1/3 cup extra virgin olive oil or avocado oil, 1 tablespoon dijon mustard, 2 tsp palm sugar or sugar of choice ( or 2 packets of stevia) , 2 peeled garlic cloves, 1/4 tsp sea salt and 1/8 tsp black pepper and process for about 30 seconds.  Add 1/3 cup fresh mint leaves and pulse until the mint is roughly chopped and evenly distributed. Pour dressing evenly into the bottom of two large mason jars.  Into each of the two mason jars layer a handful of fresh snow peas, 1/2 diced avocado, 1/3 cup raspberries, 1/4 cup feta cheese, 1/4 cup chopped walnuts and 2 cups of spring mix.  Lid the mason jar and shake to combine ingredients when ready to consume or dump contents of mason jar into a large bowl. Store assembled salad in the refrigerator.

Nut Free: yes if walnuts are omitted

Dairy Free: yes if feta cheese is omitted

Keto/Low Carb:  yes, use stevia option

Sugar Free:  use stevia option in dressing.

Aip Friendly:  no

 

Summer Salad with Poppyseed Dressing:

 

In a small food processor add 2/3 cup apple cider vinegar, 1/3 cup extra virgin olive oil or avocado oil, 1/4 cup palm sugar or other sugar of choice, 1 tbsp poppy seeds ,1 1/2 tsp sea salt, 1 tsp dry mustard powder and 1 tsp onion powder and process for about 30 seconds.  Pour dressing evenly into the bottom of two large mason jars.  Into each of the two mason jars layer 4 quartered large strawberries, 1/4 cup raspberries, 1/4 cup blueberries, 1/4 cup crumbled goat cheese and 2 cups spring mix.  Lid the mason jar and shake to combine ingredients when ready to consume or dump contents of mason jar into a large bowl.  Store assembled salad in the refrigerator.

Dairy Free: yes if goat cheese is omitted

Keto/ Low Carb:  The salad is, the dressing is not.

Sugar Free:  no

Aip Friendly:  yes if cheese and mustard powder are omitted

 

Fall Salad with Maple Balsamic Dressing:

 

In a small food processor add 1/3 cup extra virgin olive oil or avocado oil, 1/4 cup pure maple syrup, 2 tbsp balsamic vinegar, 2 tsp dijon mustard, 1 peeled garlic clove and 1/2 tsp sea salt and process for about 30 seconds.  Pour dressing evenly into the bottom of two large mason jars.  Into each of the two mason jars layer 1/4 of a thinly sliced pear, 1/4 of a thinly sliced apple, 1/3 cup chopped pecans, 1/4 cup crumbled goat cheese and 2 cups spring mix.  Lid the mason jar and shake to combine ingredients when ready to consume or dump contents of mason jar into a large bowl.  Store assembled salad in the refrigerator.  

* If you wish to make the salad dressing sugar free whisk these ingredients together: 1/2 cup avocado or olive oil, 1/2 tbsp Maple flavored extract, 1/8 tsp garlic powder, 1/2 tsp black pepper, 3/4 tsp salt, 7- 8 packets of stevia OR 2 tsp. liquid stevia (to taste.) 1/4 cup + 2 Tbsp of water, 4-5 Tbsp White Balsamic Vinegar, 1/4 Tsp Xanthan Gum (to thicken)

Nut Free: yes if pecans are omitted

Dairy Free: yes if goat cheese is omitted

Keto/ Low Carb:  yes, use sugar free dressing option.

Sugar Free:  Use sugar free dressing option. Omit Pear.

Aip Friendly:  yes if goat cheese, mustard and pecans are omitted

 

Winter Salad with Creamy Lemon Yogurt Dressing:

 

In a small food processor add 3/4 cup plain grass fed yogurt, 1/4 cup fresh lemon juice, 1/4 cup extra virgin olive oil or avocado oil, 1 tbsp fresh grated lemon zest, 1 tbsp sugar (any kind) Or 1 packet of stevia, 1 peeled garlic clove, 1 tsp sea salt and 1/8 tsp black pepper and process for about 30 seconds.  Pour dressing evenly into the bottom of two large mason jars. Into each of the two mason jars layer 2 thinly sliced carrots, 1/4 of a diced small onion, 2 ribs thinly sliced celery, 1/2 diced avocado, 1/4 cup sunflower seeds and 2 cups romaine lettuce.  Lid the mason jar and shake to combine ingredients when ready to consume or dump contents of mason jar into a large bowl.  Store assembled salad in the refrigerator.
