4 SIMPLE &amp; FAST Hearty Soup Recipes: Pumpkin Apple Ginger / Loaded Bacon &amp; Potato / Butternut Squash, Shallot &amp; Bacon / Moroccan Carrot!  (Instant pot directions included)

4 SIMPLE & FAST Hearty Soup Recipes: Pumpkin Apple Ginger / Loaded Bacon & Potato / Butternut Squash, Shallot & Bacon / Moroccan Carrot! (Instant pot directions included)

 Soup or bisque whatever you want to call them, I am all about them all year long, but especially once the cooler months roll around.  Nothing warms me up from the inside out on a chilly day like a hot cup of soup.  These recipes are bursting with so much flavor that, like me, you may not want to wait for the cold weather to make them.  Any of these recipes would be great vegetarian as well, just leave out the meat!

Each recipe is naturally Gluten Free, Grain Free and Paleo! All can be made Dairy Free and 2/3 are Keto! They are perfect recipes to add to the rotation if you are trying to eat healthier but want to actually enjoy your food!

I have included instant pot cooking directions for each recipe!  If you don’t have one yet -you NEED one! It’ll become your most used kitchen tool! This is a great on on amazon. (click here)

Yield: 2-3 servings per recipe.

Pumpkin Apple Ginger Soup

To a large pot add 1 large onion, diced and 2 tbsp of butter, ghee or coconut oil. Saute over medium heat stirring every so often for about 10 minutes until the onions are cooked and caramelized.  Stir in 3 Tbsp of Fresh Minced Ginger and 1 tbsp of chinese 5 spice powder and cook until fragrant.  Add the pot 3 apples, peeled and chopped. Saute mixture for about 5 minutes, to start cooking the apples. Then add in 3 cups of chicken or vegetable broth, 1 large (29 oz) can of pumpkin puree, 3 tbsp of honey (or 1 packet of stevia (1 gram), 1 ¼ tsp of salt and 1 cup of heavy cream or heavy coconut milk. Stir and bring to a gentle boil- cooking until the apples are soft. Depending on the type of apple used they may cook down into a puree (which is the goal) If they don’t, finish the soup off using an immersion blender to make it smooth and serve. Store in the fridge for up to 3 days, or freeze in a sealed container for a later date.

 Instant pot directions: Follow the recipe the same using the sauté setting on the instant pot. Instead of gently boiling- put the lid on the pot and cook on high pressure for 10 minutes.

Loaded Bacon & Potato Soup

To a large pot add 4 cups of chicken or vegetable broth, 1 large chopped onion, 3 cups of diced celery, 5 medium potatoes that have been peeled and diced, 2 tsp of garlic powder, 1 ½ tsp of salt, ¼ tsp of smoked paprika, ½ tsp of black pepper and 1/8 tsp of cayenne. Bring to a boil and cook until the potatoes and celery are tender.  Use an immersion blender and puree till smooth. Stir in 1 lb of cooked crispy bacon, finely chopped, 1 ½ Tbsp of finely chopped jalapeno and ¾ cup of cream or heavy coconut milk. Boil gently just until the jalapeno is cooked and serve. Store in the fridge for up to 3 days, or freeze in a sealed container for a later date.

Instant pot directions: Add the broth, onion, celery, potatoes,  salt and spices to your instant pot. Turn on high pressure for 20 minutes.  After it depressurizes use the immersion blender till smooth. Add the bacon, jalapeño and heavy cream or coconut milk. Put on sauce for just a few minutes until the jalapeño is cooked!

Dairy Free: use heavy coconut milk

Low Carb:  swap the potatoes for 4 cups of chopped cauliflower

Sugar Free:  yes

Aip Friendly: See low carb directions + use heavy coconut milk and omit cayenne, paprika and jalapeno. 

21 Day Sugar Detox: swap the potatoes for 4 cups of chopped cauliflower

Ketogenic Diet: swap the potatoes for 4 cups of chopped cauliflower

 

 

 

Butternut Squash, Shallot and Bacon:

Place 2lbs peeled, deseeded and diced butternut squash into a large pot and cover with cool water, bring to a boil and cook until fork tender, about 6 minutes, drain and set aside.  Into the pot add 1lb chopped bacon and cook until crisp, about 5 minutes, remove from pot and drain on a paper towel lined plate.  To the pot with the rendered bacon fat add 1 finely chopped shallot and cook for 4 minutes or until tender.  Add 1 tsp sea salt, 1 tsp black pepper, 1 tsp ground nutmeg, 1 tsp dried rosemary and ½ tsp smoked paprika, stir to to coat.  Add 4 cups chicken broth, the cooked butternut squash, ½ cup heavy cream or coconut cream and ¼ cup honey, use an immersion blender to puree the soup until smooth.  Increase heat to medium high and bring to a bubble to heat through.  Serve! (I garnished mine with additional heavy cream, bacon, or shallots).  Can be stored covered in the fridge for up to 3 days.  

 Instant pot directions: Put the squash into the instant pot and just cover with water. Pressure cook on high for 4 minutes.  Once de-pressurized straight the water and set the squash aside. Turn on the sauce button. Ad the bacon and cook till crisp. Add the shallot and when they are done- add the spices and sauce until fragrant. Pour in the broth, the cooked squash , heavy cream and honey.  Puree then serve.

Moroccan Carrot with Golden Raisins:

Place 5 cups baby carrots into a large pot covered with cool water, bring to a boil and cook for about 5 minutes or until fork tender, drain and set aside.  To the pot add 2 tbsp butter or coconut oil and 1 small diced onion and cook until soft, about 3-5 minutes.  Add to the pot 2 tsp smoked paprika, 1 ½ tsp sea salt,1 tsp grated fresh ginger, 1 tsp black pepper and ½ tsp ground cumin, stir to coat.  Add the carrots back into the pot along with 2 ½ cups chicken broth, 2 tbsp honey, 1 tsp lemon juice and ½ cup plain yogurt and use an immersion blender to puree until smooth.  Add to the soup ½ cup golden raisins and increase heat to medium high and bring to a bubble to heat through.  Serve immediately with additional plain yogurt to garnish. Can be stored covered in the fridge for up to 3 days.  

Instant pot directions:  Put the carrots with just enough water to cover them into the instant pot. Cook on high pressure for 3 minutes. Once de-pressurized- drain the carrots and set aside. Turn on the sauce button and add the butter, and onion and saute until the onion is cooked through. Add all the spices and saute until fragrant for a minute or two. Add the carrots, chicken broth honey, lemon juice and yogurt. Turn off the instant pot (or put it on the warm setting). Blend using an immersion blender  and then stir in the raisins.
