Hearty & Healthy Breakfast Porridge. ( 2 flavors ) AIP/ Keto/ Dairy Free/ Nut Free/ Grain Free/ Gluten Free.

Nothing warms me up on a cold day quite like a big bowl of hot cereal. It is definitely something I missed during the period of my life that I was gluten and grain free, until I came up with these delicious grain free alternatives!  Both of these recipes are great and tasty on their own, or as a base recipe for whatever kind of stir in you like; chocolate chips, nuts, pumpkin seeds, dried fruit, fresh berries, whatever.. the possibilities are truly endless! Even though I no longer need to eat a gluten/grain free diet I still reach for these recipes over oatmeal! They are filling but don’t leave you feeling weighed down. They work perfect for weight loss purposes too. Both recipes can be made low carb/ Keto!

 

Nut Free Pumpkin Porridge (Autoimmune Paleo/ Keto/ Low Carb)

Preheat oven to 350 degrees and line a baking sheet with parchment paper, prepare an acorn squash or sugar pumpkin by cutting it in half and removing the seeds.  Place the halves cut side down and roast for 1 hour, allow to cool until it can be handled, scoop out the flesh and place into a large sauce pan.  To the sauce pan add 1 cup full fat coconut milk, 5 ½- 5 ¾ cups unsweetened coconut flakes, 2 tsp ground cinnamon, 2 tsp pumpkin pie spice, 1 tsp vanilla extract, ½ tsp ground nutmeg, ⅛ tsp sea salt and ⅛ tsp ground ginger and cook over medium heat until thick and bubbly. Sweeten with 2 tbsp of pure maple syrup/honey or 1/4 Tsp of liquid stevia (or more to taste). If you prefer the porridge thicker add additional coconut flakes, if you prefer it thinner add additional coconut milk. Serve Hot.  Store in a sealed container in the fridge for up to 3 days.

Sugar Free:  yes if stevia is used in place of maple syrup/honey

Aip Friendly:  yes if maple syrup/honey is used in place of stevia

 

Sweet Potato Almond Porridge (Grain/Egg/Dairy Free/Keto)

In a small saucepan over medium heat whisk together 1 cup blanched almond flour, 1 cup dairy or non-dairy milk, ¾ cup sweet potato puree, 2 tbsp pure maple syrup/honey or 1/4 tsp or more of liquid stevia, 1 tsp potato or sweet potato starch, 1 tsp vanilla extract, ½ tsp ground cinnamon, ⅛ tsp ground ginger and ⅛ tsp sea salt until the mixture thickens to about the consistency of oatmeal.  Serve Hot.  Store in a sealed container in the fridge for up to 3 days.

Keto/ Low Carb:  You can swap the sweet potato for acorn squash or pumpkin. Use the stevia option.
