Legit Dairy Free Mac and Cheese! (Grain/Egg/Gluten Free)

Mac and Cheese is my favorite thing in the world. So after typing up my worlds best mac and cheese recipe.. I realized I couldn’t leave the dairy free crowd hanging. So I ran back into the kitchen and started creating what I consider to be the best tasting dairy free cheese sauce I have ever had. You could trick just about anyone into thinking it’s the real thing due to its flavor and texture and color! This recipe makes a much smaller batch than my other recipe- so if you plan to make this for a crowd I would double or triple accordingly. I’m sharing a smaller batch as this recipe is healthy enough to eat more often.

Please note you MUST use my homemade almond milk for this cheese sauce to turn out properly. I tested out store bought and it wasn’t creamy enough to turn out that way I wanted.

 

8-12 oz. of pasta (Gluten Free/Grain Free or Regular)

8 slices of bacon cooked till crispy and chopped

 

Dairy Free Cheese Sauce 

1/4 cup nutritional yeast flakes

1/2 cup coconut oil

1 1/3 cup homemade almond milk

1/4 cup tapioca or Arrowroot Starch 

1 tbsp chickpea miso paste (optional- its added for flavor) 

1 tbsp tomato paste

1 tsp sea salt

1/2 tsp mustard powder

1/2 tsp garlic powder

1/8- 1/4 tsp cayenne pepper (1/8-isnt spicy - the full 1/4 tsp gives it a spicy kick)

1 tsp turmeric powder

1.    Boil pasta of choice, strain and rinse with cold water. Set aside. Meanwhile make sure you have a batch of homemade almond milk available or make some from page00. 

2.    Cook the bacon- chop and set aside.

3.    Make the cheese sauce- Add all the cheese ingredients to a medium pot on medium heat and whisk for about 5 minutes until thick. Do not turn the heat up to high or the cheese will break and lose its elastic cheesy texture. Don’t try to speed up the 5 minutes by turning up the heat. 

4.    Stir the pasta and cheese together and sprinkle the bacon on top. Serve immediately.

Note: Due to the nature of this dairy free cheese if you want it to maintain a "stringy" (for a lack of better words) texture -then don't ever bake it.  High heat is your enemy when it comes to this nondairy cheese.
