4 FAST weeknight meal recipes: Meat & Veggie Baked Parchment Packs 4 Ways!

These meals are SUPER easy to assemble and require next to zero clean up!  They are built right on top of a sheet of parchment, tied up with kitchen twine and sent into the oven!  Each recipe is enough for two people but can easily be doubled or tripled if you have more mouths to feed!  Kids will also love “unwrapping” these, making dinner time more fun and interactive for everyone!  If you prefer to grill them , just wrap them in foil instead! Best of all you wont believe how incredibly tender the meat turns out- it practically falls apart as if its been in the crockpot all day! These recipes are a win win all around, easy to prepare and beyond delicious!  Perfect for a week night dinner!!

Yield: 2 servings each

 

Lemon and Dill Salmon with Asparagus

Preheat oven and a large baking sheet to 400 degrees.  Rip off two 15x15 inch squares of parchment and place on a flat surface.  To the middle of each parchment lay down 4 trimmed asparagus spears, then 1-6oz salmon filet, and top with 1 minced garlic clove, 1 tsp lemon zest, ¼ tsp dried dill, ¼ tsp sea salt, ⅛ tsp black pepper and pour 1 tbsp lemon juice and 1 tbsp extra virgin olive oilover the top.  Bring the four sides together to form the pouch, tuck in any remaining sides and tie securely with bakers twine.  Place prepared parchment packs into oven on the hot baking sheet and bake for 20 minutes.  Carefully remove from oven, place on plates and serve.  Be careful when untying and opening the packs as they will be very hot and steam will escape!

Shrimp Scampi with Spiralized Celery Root 

Preheat oven and a large baking sheet to 400 degrees.  Rip off two 15x15 inch squares of parchment and place on a flat surface.  To the middle of each parchment lay down ½ cup spiralized celery root, then 6oz peeled and deveined shrimp, and top with 1 minced garlic clove, 1 tsp lemon zest, ¼ tsp lemon zest, ¼ tsp sea salt, ⅛ tsp black pepper and pour 1 tbsp lemon juice, 1 tbsp white wineand 1 tbsp melted butter over the top.  Bring the four sides together to form the pouch, tuck in any remaining sides and tie securely with bakers twine.  Place prepared parchment packs into oven on the hot baking sheet and bake for 20 minutes.  Carefully remove from oven, place on plates and serve.  Be careful when untying and opening the packs as they will be very hot and steam will escape!

Honey Mustard Chicken with Baby Potatoes

Preheat oven and a large baking sheet to 400 degrees.  Rip off two 15x15 inch squares of parchment and place on a flat surface.  To the middle of each parchment lay down 3 quartered red baby potatoes then top with 1-6oz chicken thigh, then top with ½ tsp sea salt, ¼ tsp black pepper, 1 tbsp extra virgin olive oil, 1 tbsp apple cider vinegar, 1 tbsp raw honey and ½ tbsp dijon mustard.  Bring the four sides together to form the pouch, tuck in any remaining sides and tie securely with bakers twine.  Place prepared parchment packs into oven on the hot baking sheet and bake for 20 minutes. Carefully remove from oven, place on plates and serve.  Be careful when untying and opening the packs as they will be very hot and steam will escape!

Ginger Lemon Sesame Chicken with Green Beans

Preheat oven and a large baking sheet to 400 degrees.  Rip off two 15x15 inch squares of parchment and place on a flat surface.  To the middle of each parchment lay down ½ cup trimmed fresh green beans then top with 1-6oz chicken thigh, then top with ½ tsp sea salt, ¼ tsp black pepper, 1 tbsp extra virgin olive oil, 1 tbsp sesame oil, 1 tbsp lemon juice, 1 tsp freshly grated ginger and 1 tsp lemon zest.  Bring the four sides together to form the pouch, tuck in any remaining sides and tie securely with bakers twine.  Place prepared parchment packs into oven on the hot baking sheet and bake for 20 minutes.  Carefully remove from oven, place on plates and serve.  Be careful when untying and opening the packs as they will be very hot and steam will escape!
