Gluten/Grain/Dairy /Egg Free Ridiculously Good Lettuce Wraps 4 flavors: Pf Chang Copycat, Korean BBQ, Orange Beef & General Tso!

 You’ve seen them on the menus of all your favorite restaurants over the years, and if you’re like me you order them pretty much every time you see them.  What am I talking about?  Lettuce wraps of course!  They have become a staple at so many restaurants now, why not make them a staple in your own home?

All or these recipes are substantially healthier than what you’ll get at a recipe but the flavors are SPOT on!! Eating healthy can be boring sometimes.. but all of these wraps really make it fun. Try 1 recipe or all 4! They are all really good! 

 

All 4 recipes Yield 16 wraps each!

PF Chang copycat lettuce wraps.

In a large skillet over medium high heat bring to temperature 1 ½ tbsp sesame oil, once hot place 1 lb ground chicken or turkey into the skillet and cook until browned.  To the skillet add ½ cup chopped mushrooms, ¼ cup chopped scallions, 4 minced garlic cloves and 1 tbsp grated fresh ginger and cook for an additional 3 minutes or until the mushrooms soften. In a small bowl combine 3 tbsp coconut aminos, 1 ½ tbsp sriracha, 1 ½ tbsp honey, 1 tbsp rice vinegar , 1 tsp dijon mustard and ½ tsp sea salt and pour into the skillet and mix well to combine all of the ingredients and remove from heat.  Serve immediately with 16 leaves of bibb lettuce or place in a covered container in the fridge for up to 3 days.

Dairy Free: yes

Low Carb:  lower carb if you swap the honey for a sugar free sweetener.

Sugar Free:  Swap the honey for a sugar free syrup of choice.


 

Korean BBQ

In a large skillet over medium high heat bring to temperature 1 ½ tbsp sesame oil, once hot place 1 lb ground chicken or turkeyinto the skillet and cook until browned.  To the skillet add ½ cup chopped mushrooms, ¼ cup chopped scallions, 4 minced garlic cloves and 1 tbsp grated fresh ginger and cook for an additional 3 minutes or until the mushrooms soften. In a small bowl combine 3 tbsp coconut aminos, 1 ½ tbsp sriracha, 1 ½ tbsp honey, 1 tbsp coconut sugar, 1 tbsp gluten free hoisin sauce, 1 tbsp sesame seeds, 1 tbsp ricevinegar, 1 tsp dijon mustard and ½ tsp sea saltand pour into the skillet and mix well to combine all of the ingredients and remove from heat.  Serve immediately with 16 leaves of bibb lettuce or place in a covered container in the fridge for up to 3 days.

Dairy Free: yes

Low Carb:  if swapping out the honey for a sugar free syrup.

Sugar Free: Instead of honey use a sugar free syrup of choice.


Orange Beef

In a large bowl place 1 ½ lbs thinly sliced skirt steak and 1 tbsp cassava flour and toss to coat, set aside. In a large skillet over medium high heat bring to temperature 1 ½ tbsp sesame oil, once hot place the cassava coated steak into the skillet and cook for 3-4 minutes or until cooked through and remove from skillet.  In a medium bowl combine 3 tbsp orange juice, 3 tbsp gluten free hoisin sauce, 3 tbsp rice vinegar, 3 tbsp coconut aminos, 1 tbsp cassava flour, ½ tsp sea salt and ¼-½ tsp crushed red pepper flakes and pour mixture into the hot skillet with ½ cup chopped green onion and allow to thicken. Add the beef back to the skillet along with 2 tbsp freshly grated orange zest  and mix well to combine all of the ingredients and remove from heat.  Serve immediately with 16 leaves of bibb lettuce or place in a covered container in the fridge for up to 3 days.

Low Carb:  yes

Sugar Free:  Not totally sugar free- but relatively low. The sugar comes from the bit of orange juice.


 

General Tso

In a large skillet over medium high heat bring to temperature 1 ½ tbsp sesame oil, once hot place 1 ½ lb diced chicken thighs, 4 minced garlic cloves, ½ tsp sea salt, ½ tsp crushed red pepper flakes and ½ tsp black pepper-into the skillet and cook until browned.  In a medium bowl combine ⅓ cup coconut aminos, 2 tbsp gluten free hoisin sauce, 1 tbsp sriracha, 1 tbsp honey, 1 tbsp cassava flour, 1 ½ tbsp orange juice, 1 tbsp freshly grated ginger and 2 tsp rice vinegar and pour into the skillet.  Toss to combine and cook until sauce becomes thick.  Serve immediately with 16 leaves of bibb lettuce or place in a covered container in the fridge for up to 3 days.

Low Carb:  yes

Sugar Free:  to reduce sugar swap out the honey for a sugar free sweetener.
