I have some epic pie recipes (and pie crust!!) But as usual I wanted to make sure no one was left out.. SO I came up with an autoimmune paleo pie crust recipe that is gluten free/ Dairy free/ Grain free and Nut Free!

Autoimmune Paleo Pie Crust
Recipe yields 2 -9 inch crusts.
In a microwave safe bowl (in in a small sauce pan) whisk together ½ cup of water and 1 teaspoon of gelatin. Place the bowl in the microwave or the sauce pan on the stove and bring to a boil. Then place 1 ice cube in the the gelatin water and place it it in the freezer to cool it down to room temperature (Not cold enough for it to turn into jello). Set aside.
In the bowl of a large 14 cup food processor combine:
114 grams (1 ½ cups) of Cassava Flour
132 grams (1 cup) of Arrowroot Starch
¾ teaspoon of sea salt
96 grams (8 tbsp) Palm Shortening
84 grams (6 tbsp) chilled Ghee
42 grams ( 3 tbsp) Applesauce.
Pulse until the butter and shortening and broken down into pea sized pieces. Pour in the cooled gelatin water and run the food processor until a smooth dough forms. Roll out between two sheets of parchment paper, dusting with extra starch as needed to prevent sticking. Quickly place the rolled out crust into the pie pan using the parchment as your guide. At this point you can either fill the crust with your filling of choice and follow the directions for that pie or bake the crust in a 350 degree oven for 20-25 minutes until lightly golden.
