Keto Carrot Cake Cheesecake Bars (Egg/Grain/Sugar Free & Low Carb)

Holy heaven on earth this cheesecake is GOOOOD! I selfishly created the recipe for myself- I've been following the keto diet and wanted aDessert. So all that to say its Low Carb, Egg Free, Sugar free (The cheesecake uses stevia and the crust uses xylitol or erithritol) The crust honestly tastes like cake- its not super dense.

We baked ours in a parchment lined square pan-then sliced into squares (I dip my knife in cold water for a clean slice) and then topped with some chopped toasted pecans, cinnamon and a some additional shredded carrots.

If you wish to make a standard round cheesecake using a springform pan- feel free to do that too 馃檪

AND if you want to -the cheesecake can be frozen if you have any leftover or kept covered in the fridge for up to a week!

Ingredients

For the crust:

路      2 Cups Blanched Almond Flour

路      1/2 Cup of xylitol (or any another granulated sugar of choice)

路      2 Tsp. Baking Powder

路      1 Tbs Oil or Melted Butter

路      1 Tbs Vanilla Extract

路      1/8 Tsp Sea Salt

路      1/2 Tbs Nondairy Milk or Water

路      2 Tsp Cinnamon

路      3/4 Cup Grated Carrots

For the No Bake Cheesecake Topping:

路      1 3/4 cup heavy whipping cream, separated

路      1 packet (3/4 tbsp) unflavored, grass-fed gelatin

路      2 8 oz. packages of cream cheese, room temperature

路      1 tsp vanilla extract

路      1/4 tsp sea salt

路      1 1/2 - 2 tsp liquid stevia

路      Pecans (optional)

Instructions

For the crust:

1.    Preheat Oven to 350 Degrees. Line a 7x7 (or a size similar) square baking dish or a 8 inch cheesecake pan with Parchment, leaving a bit of an overhang to aid in removing the bars after baking.

2.    Make the crust. Combine all the ingredients and use your hands to mix. The dough will be thick and may not come together just using a spoon. Press this dough evenly into the bottom of the prepared pan.

3.    Place in the oven and bake 25 minutes.

4.    Remove from oven and allow to cool.

For the No Bake Cheesecake Topping:

5.    Warm 3/4 cup cream in a bowl.

6.    Pour in gelatin and stir until dissolved. Set aside to cool for a few minutes.

7.    Add cream cheese into a food processor process until smooth.

8.    Add the cream and gelatin, vanilla extract, stevia and salt. Blend on high until incorporated.

9.    Pour in 1 cup cream and blend on high until mixture looks whipped and thickened about 5 minutes.

10.  Pour onto crust in pan and top with pecans (optional).
