Grain Free Jelly Donuts! (Gluten/Dairy Free)

These donuts are killer good!!  They nearly made me crazy trying to create them. 8 recipe trials later, and I finally nailed them. Totally worth all the hard work, and giant mess that happened in my kitchen.

 

Before we get started here are a few important notes:

 

  • I used Potato Flour in this recipe because it has magical magical abilities. It helps give these donuts the perfect texture! Potato flour is different than potato starch! Very different. It soaks up liquid like a sponge!! Make sure to buy the right thing!!

  • For the yeast, I used Fast Acting yeast! Its important you purchase and use this type as well, or else your donuts wont rise as quickly as intended for this recipe.

  • DO NOT recommend making ANY Changes to the recipe. Donuts are finicky, and if one ingredient is changed, the whole recipe may change.  (hence why it took me so many trials to get the recipe exactly how I wanted!)

Grain Free Jelly Donuts!

Yield: 8 Donuts

Ingredients

Yeast Mixture

·      1/4 cups of warm water

·      2 Tsp. Fast Acting Yeast

·      1 TBSP of Sugar

The Donuts

·      1/2 packed cup of Coconut Flour

·      1/2 packed cup of Potato Starch

·      1/4 packed cup + 1 TBSP Tapioca Starch

·      1 Tsp. Xanthan or Guar Gum

·      2 Tsp. Baking Powder

·      2 Tsp. Potato FLOUR

·      1/2 Tsp. Salt

·      1 cup of powdered sugar

·      5 Tbsp Shortening

·      3 Large Eggs

Oil or Frying

·      Coconut oil or Palm Shortening work great if you want to make your donuts healthier!

Instructions

1.    Turn oven on to 375 degrees (you will be using the warm oven, with the heat turned off to let the donuts rise!)

2.    In a small cup combine the luke warm water, yeast and TBSP of sugar. Mix together and set aside.

3.    In the bowl of a stand mixer combine all of the Donut Ingredients. Pour in the yeast mixture and then mix on high for 1-2 minutes. The dough will thicken some as it mixes- as the xanthan gum and potato flour take a minute to activate. The dough should be thick and sticky.

4.    Plop the dough onto a surface dusted with tapioca starch. Pat into a round about 1 1/2 inches thick. Cut into 8 round circles using a biscuit cutter or glass. (Dust the biscuit cutter with starch)

5.    Place the donut rounds on a baking sheet. (Tip: cover your baking sheet with parchment paper first to prevent sticking).

6.    Brush each donut with a little water. Cover the tray with a towel.

7.    Turn off the oven, and then place the covered tray into the oven. Leave the oven door open a crack!

8.    Leave the donuts in the warm oven for 30 minutes to rise.

9.    Meanwhile as several inches of oil to a heavy bottomed sauce pan or skillet. Heat it up slowly over low heat for the 30 minutes while the donuts are proofing.

10.  After the 30 minutes remove the donuts from the oven, and one by one fry them! I keep my heat pretty low, just high enough that there is a little bubbling from the oil. If your heat it too high your donuts will brown on the outside before they cook fully on the inside. Make sure to flip the donuts a few times so they cook evenly. On average I cooked mine for about 1 1/2- 2 minutes.

11.  Once the donuts are all fired, and cooled its time to fill them with jelly.

12.  Use a toothpick to poke a hole in each donut, move it around inside the donut to make room for the jelly.

13.  Place jelly flavor of choice into a piping bag or a plastic bag with a corner snipped off. Put the tip of the piping bag and squeeze jelly into the donut.
