Vanilla Wafers! 2 ways. (Gluten Free Cookies and Grain Free Cookies)

One of my most favorite things to snack on while I watched cartoons growing up was Nilla Wafers!  I would plop down on the floor, turn on my favorite show with my arm in that iconic yellow box, elbow deep!  They are one of the things I have missed most since going gluten free and now I can enjoy them once again!  Just as delicious, if not more so, than the originals you can feel like a kid again with these delicious Vanilla Wafer Cookies.

These cookies are super easy to bake up as a last minute after school snack to have waiting for your little ones.  If you are trying to transition your kids away from processed junk food but do not want to deny them of a classic sweet treat, these cookies are just the thing.  Perfect alone or paired with my Banana Pudding!  So grab your kids and a glass of your favorite milk and enjoy!

I made for you TWO DIFFERENT recipes. I know many of you have different intolerances and I wanted to find  a way for no one to miss out! Version #1 is made with almond flour and version #2 is made with rice flour. Both versions are gluten free, can be made dairy free and are coconut free!

Grain Free Vanilla Wafers

Ingredients

·      1 cup packed Blanched Almond Flour

·      1 cup Potato Starch

·      3/4 cup + 3 TBSP Organic Cane Sugar

·      1/4 + 1/8 tsp Salt

·      1 TBSP Vanilla Extract

·      1 large Egg

·      6 TBSP Butter or Earth balance (or shortening), room temperature

·      1 tsp Xanthan Gum

Instructions

1.    Cream butter, sugar and salt together. Once combined add vanilla and egg.

2.    Add remaining ingredients and mix to combine.

3.    Cover and chill dough in freezer for 45-60 minutes.

4.    Heat oven to 330 degrees

5.    Take heaping teaspoon sized amounts of the chilled dough, roll and flatten to a sand dollar size.

6.    Place on parchment lined baking sheet and bake for 18-20 minutes, rotating the pan half way through bake time.

Notes

Shortening does not taste as good as butter in this recipe! If you are able to eat butter I do recommend using it!

 

VERSION #2

Rice Flour Vanilla Wafers

Ingredients

·      9 TBSP Butter (regular or earth balance butter) or Shortening, room temperature

·      3/4 cup Organic Cane Sugar

·      1/4 tsp Salt

·      1 TBSP Vanilla Extract

·      1 large Egg

·      1/2 cup packed + 2 TBSP Sweet Rice Flour (100g)

·      1/2 cup packed Superfine Rice Flour (60g)

·      1/3 cup Potato Starch (60g)

·      3/4 tsp Xanthan Gum

·        

Instructions

1.    Cream butter, sugar and salt together. Once combined add vanilla and egg.

2.    Add remaining ingredients and mix to combine.

3.    Heat oven to 330 degrees.

4.    Oil your hands and take heaping teaspoon sized amounts of the dough, roll and flatten to a sand dollar size.

5.    Place 1/2 inch apart on parchment lined baking sheet and bake for 22-23 minutes, rotating the pan half way through bake time.

6.    Allow to cool completely before removing from baking sheet.
