Banana Cake with Coconut Cream Cheese Frosting and Salted Caramel (Gluten/Egg/Dairy/Nut Free&Paleo/Vegan)

Take a quick trip to the tropics with this delicious Banana Cake with Coconut Cream Cheese Frosting and Salted Caramel topping!  This gluten free/dairy free/egg free/nut free cake is the perfect escape from your daily grind.  Enjoy it with a hot mug of coffee or tea and let the day slip away!

With Labor Day just behind us I'm trying to salvage the last bit of summer that I can and this cake does just that.  The combination of fresh banana and light fluffy coconut creates the perfect balance of flavors with the decadent salted caramel bringing it full circle!  Artfully arrange some banana chips on top for some pizazz not to mention a great crunchy texture!

The best part of this recipe? The FROSTING! Its made from coconut butter- and is 100% dairy free but tastes exactly like cream cheese frosting. No nuts needed either.

·      6 TBSP Butter

·      1/2 cup + 2 TBSP Palm Sugar

·      1/2 TBSP Heavy Cream

Instructions

Banana Cake

1.    Preheat oven to 350 degrees and line an 8x8 or 9x9 pan with parchment paper.

2.    In a large bowl for a stand mixer combine the bananas, applesauce, vanilla, butter, lemon juice and milk and mix together on medium speed until well combined.

3.    In a separate medium size bowl combine the sugar, rice flour, baking powder and salt. Gradually add the dry mixture to the wet ingredients on medium speed. Mix until well combined.

4.    Pour the batter into the parchment lined pan. Bake for 43-45 minutes or until toothpick inserted into the center of the cake comes out clean. Allow to cool completely before frosting!

Coconut Cream Cheese Frosting

5.    In a microwave safe bowl combine the coconut manna/butter, coconut cream, sugar, salt, lemon juice, vanilla and vegetable shortening.

6.    Melt in the microwave for 30 seconds-1 minute, then place in fridge until chilled and thick.

7.    Once chilled, rewhip and allow to sit out for 15 minutes before frosting the cake.

8.    Spread a thick layer on top of the cake once it is cooled.

Salted Caramel

9.    In a small saucepan over medium to medium high heat combine the butter, palm sugar, heavy cream and salt. Stir continually until the ingredients come together and begin to slowly boil. Cook until the mixture thickens, about 3 minutes.

10.  Drizzle the hot caramel over the frosted cake, as much or as little as desired. Arrange banana chips in the center of the cake for a pretty effect and enjoy!
