AIP Crispy Waffles (Gluten/Grain/Egg/ Dairy/ Nut/ Coconut/ Nightshade Free)
AIP waffles say whatttt!
This recipe made me pretty loco trying to figure out! Trying to bake without eggs/grain/gluten/nuts/seeds/coconut is on the edge of being impossible. I made these waffles EIGHT times.
I recently got my hands on some Cassava Flour from Otto's Cassava and Anti-Grain Foods Squash Flour and put those to work to create these crispy waffles! My goal from the beginning was to mimic my extra crispy paleo waffle recipe that has become really popular. I didn't get quite there..because the reality is that without eggs and some flours you can't get a certain text. BUT that being said I think these are really good. My husband kept running off with them before I could take a picture.
These waffles are crispy on the outside and just a little soft/gooey on the inside! The longer you cook them the crispier they will get! As they sit out for a bit they may start to soften up! I suppose its just the nature of how these particular flours work (I'm still trying to figure them out)
At this point I cannot offer and substitution suggestions..and I would only use Otto's Cassava Flour and Antigrain Foods Squash Flour. (Both have to be ordered as they are not yet available in stores) The Antigrain Sweet Potato Flour might work instead of the Squash Flour- but I have not the chance to test it out!
AIP Crispy Waffles (Gluten/Grain/Egg/Dairy/Nut/Coconut/Nightshade Free)
1 1/2 cup of Cassava Flour (171 grams)
1 cup of Squash Flour ( 112 grams)
1/4 cup of Arrrowroot Starch (33 grams)
1/3 cup to 2/1 2 TBSP of Melted Coconut Oil or Melted Ghee (121 g)
1 Teaspoon of Baking Soda
1/4 Teaspoon of Salt
4 TBSP Maple Syrup (77 grams)
2 cups of Coconut Milk or Water ( 440 grams)
1 1/2 TBSP Lemon or Lime Juice
Preheat Waffle Iron that makes thin waffles (Not Belgium)
In a bowl mixed together all of the waffle ingredients -stirring in the lemon or lime juice at the very end. Your batter will be VERY thick..almonst like a cookie dough. Since there are no eggs this is required to get them to cook through properly.
Place 3-4 heaping TBSP of Batter into waffle iron and cook till crispy and firm to touch. Recipe will yield 6-8 waffles.
If you are not on the AIP diet feel free to use these substitutions: -Feel Free to use Almond or Cashew Milk instead of Coconut. (or even regular milk) -Tapioca Starch will work the same as the Arrowroot! Potato Starch would also likely work. -Baking Powder will also work instead of the Baking Powder. -Honey or Agave Nectar will work as a sub for the Maple Syrup.
