One Pot Honey Mustard Chicken and Potatoes. (Paleo/Grain Free/Dairy Free) With Keto Directions.
This recipe is SIMPLE but heavenly! It comes together in a flash and its extreme comfort food. Im not a mustard fan but this dish does it for me. When my website came down for 2 years..this is one of the recipes that I often thought of and missed. I highly recommend giving it a try! :)
If you are sticking to a lower carb or keto diet you can make this recipe too! Just swap the potatoes out for a Low carb vegetable such as chunks of cauliflower, rutabaga or Parsnips (or a combo of them)! Cook them in the skillet first just like the potatoes. Then swap out the honey for a sugar free syrup. Most grocery stores carry an assortment of sugar free syrups. Some are junkier than others.. I will be hunting down a brand that I think has the cleanest ingredients..but honestly just buy whatever you are comfortable with. I don’t like being dogmatic..and telling people what they should and shouldn’t eat :).
Honey Mustard Chicken and Potatoes!
· 3 tbsp butter or coconut oil
· 3 medium potatoes, diced
· 1 lb chicken thighs
· 1 1/2 tsp dry mustard
· 1 tsp sea salt
· 1 tsp black pepper
· 1/4 tsp dried thyme
· 1/2 cup honey
· 1/3 cup apple cider vinegar
1. In a large skillet over medium high heat melt the butter then add the potatoes, cook for 10 minutes stirring regularly.
2. To the skillet add the chicken, dry mustard, salt, pepper and thyme, cook on the first side for 4 minutes. Flip the chicken and add the honey and vinegar to the pan. Reduce heat to medium and continue to cook for 10 minutes, until the chicken is cooked through, potatoes are tender and sauce is thick.
