2 CRAZY good keto cookies! Chocolate Chip + Double Chocolate Chip! (Grain/Egg/Dairy/Sugar Free)

I believe in eating cookies even when on a diet! Especially when they are low carb, high protein, sugar free cookies. And YES these are totally healthy!  Though yes, I must warn you- eating trays and trays may affect your waistline a little (and you may be tempted to consume that many.) Be sure not to mix the dough for longer than 30 seconds or it will become too oily.

As an added bonus these cookies are also Egg Free and Dairy Free!  For the chocolate chips I use the brand lily's. I like to use either the chips or I buy a bar and cut it into chunks! 

 

Keto Chocolate Chip Cookies

  •   2 cups blanched almond flour (288g)

  •  ½ cup xylitol (80g)

  •  1 tsp baking powder

  •  ¼ tsp salt

  •  3 tbsp + 1 tsp coconut oil (54g)

  •   1 tbsp vanilla extract

  • 2 tbsp dairy or non dairy milk (28g)

  • ½ cup Sugar free chocolate chips (82g)

  1. Preheat oven to 350 degrees.

  2. In the bowl of a stand mixer (by hand should work as well) combine all of the ingredients stirring in the chocolate last.

  3. Form 12 cookies with your hands into round / flat patties (I made mine 3/4 inch thick and about 3 inches wide). Note: This dough may be a little crumbly- don't fret if that’s the case!

  4. Bake 16 minutes until the bottom and the edges start to look lightly golden brown. Let cool completely before removing from pan. Store in a sealed bag in the fridge or the freezer.

Keto Double Chocolate Chunk Cookies

  2 cups blanched almond flour (288g)

  1/3 cup cocoa powder (27g)

 1 tsp baking powder

 ¼ tsp salt

 ½ cup + 2 tbsp xylitol (100g)

1 tbsp vanilla extract

5 tbsp coconut oil

 2 tsp water

 2 tbsp applesauce (30g)

 ½ cup sugar free chocolate chips (82g)

  1. Preheat oven to 350 degrees.

  2. In the bowl of a stand mixer (by hand should work as well) combine all of the ingredients until the dough comes together stirring in the chocolate last.

  3. Form 16 cookies with your hands into round / flat patties (I made mine 1 inch thick and about 3 inches wide).

  4. Bake 15 minutes. Remove from oven and allow to cool before removing from baking sheet. Store in a sealed bag in the fridge or the freezer.
