Twice Baked Potatoes with Dairy-Free Velveeta (Dairy/Gluten/Grain/Nut/Sugar/Egg Free)

You can do a lot with these potatoes! Think fresh garlic, even more bacon, green onions, etc. They are also freeze-able. Think make-ahead holiday comfort food, or make ahead lunch/dinners.

Best of all they taste JUST like they were made with Dairy. The flavor is spot on, and they develop the yummy cheesy crust that you would get with real cheese.

To make this recipe you'll need to use the Dairy Free Velveeta recipe.

Twice Baked Potatoes with Dairy-Free Velveeta (Dairy/Gluten/Grain/Nut/Sugar/Egg Free)

Ingredients

  • 4 baking potatoes, washed

  • 2 tbsp oil for rubbing potatoes

  • 1/2 cup bacon, fried and chopped

  • 1 cup/1 batch dairy-free Velveeta. Leave out the gelatin in this recipe because you just need the cheesy sauce.

  • 1/2 cup bacon fat/ghee/butter/coconut oil

  • Optional: 1/2 cup diced onion and 1/2 cup dairy-free ricotta/sour cream

  • 1/2 tsp garlic powder

  • 1 tsp sea salt

  • 1/2 tsp cracked pepper

Instructions

  1. Preheat oven to 400.

  2. Wash potatoes, rub with oil, place on a parchment lined baking sheet, and bake for 1 hour or until completely cooked through. Lower the heat to 350.

  3. Fry bacon, chop, and set aside. Reserve bacon fat (optional).

  4. Once the potatoes are done baking, cut each potato down the middle lengthwise with a sharp knife. Scoop out the insides into a pot. Leave a rim of potato intact for support. Lay the hollow potato shells on a lined baking sheet. 

  5. Mash the potatoes with the remaining ingredients on the stove over low heat (except for the bacon). This is to melt the cheese into the potatoes. Use an immersion blender (optional) to create a smooth puree. 

  6. Fill the potato shells with the puree (okay if they overflow a little). Sprinkle with bacon and bake for 1 hour.
