Grain Free 4 Layer Pizza “Cake”! (Gluten/Nut/Soy Free&Modified Paleo)

Buckle your seat belts kids because this recipe is truly EPIC!  This pizza cake really, well... takes the cake!  Four layers of crispy, pillowy crust among layers of sausage, cheeseburger, bacon and meatball all held together with saucy cheesy goodness.  If this doesn't have you drooling yet than you might need to check your pulse!  All of the delicious meat I used was sent to me from 528o Meat and it could not be more perfect in this giant pizza stack!  This is a fairly time consuming but relatively easy recipe to make, and I promise you, it will be well worth your time!


Ingredients

  • Pizza Dough

  • 1 1/3 Cups Coconut Flour (216g)

  • 1 1/3 Cups Potato Starch (258g)

  • 1/4 Cup Potato Flour

  • 2 TBSP + 2 tsp Xanthan Gum

  • 2 TBSP + 2 tsp Baking Powder

  • 2 1/2 Cups Warm Water

  • 1/2 Cup + 2 TBSP Spectrum Shortening

  • 6 Large Eggs

  • 2 TBSP Vinegar or Lemon Juice

  • 1/2 tsp Salt

  • Sausage Layer

  • 1/2 lb Ground Italian Sausage

  • 1 TBSP Coconut Oil

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

  • 1/4 cup Pizza Sauce

  • 1/4 cup Shredded Mozzarella Cheese

  • Cheeseburger Layer

  • 1/2 lb Ground Beef

  • 1 TBSP Coconut Oil

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

  • 1/2 tsp Oregano

  • 1/2 tsp Minced Garlic

  • 1/2 tsp Cayenne Pepper (adjust to taste)

  • 1/4 Cup Pizza Sauce

  • 1/4 Cup Shredded Cheddar Cheese

  • Bacon Layer

  • 4-5 Slices of Bacon

  • 1/4 Cup Pizza Sauce

  • 1/4 Cup Shredded Mozzarella Cheese

  • Meatball Layer

  • 1/2 lb Ground Beef

  • 1 TBSP Coconut Oil

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

  • 1 tsp Minced Garlic

  • 1 tsp Oregano

  • 1/4 Cup Pizza Sauce

  • 1/2 Cup Shredded Mozzarella Cheese

Instructions

  1. Pizza Dough

  2. Preheat oven to 350 degrees.

  3. Using a large stand mixer combine all of the dough ingredients on medium speed until well combined, about 2 minutes.

  4. Using well oiled hands divide the dough into 4 equal sized balls. 

  5. Spray the inside of 4, 6 inch springform pans with oil and press the dough balls into each one. Press evenly across the bottoms of, and half way up the sides of each pan.

  6. Place pans into the oven and bake for 15 minutes. Allow to cool to handle for cake assembly.

  7. Sausage Layer

  8. Heat coconut oil in a skillet over medium heat.

  9. Once hot add the sausage, salt and pepper. Cook until brown, about 7 minutes. Remove from heat.

  10. Cheeseburger Layer

  11. Heat coconut oil in a skillet over medium heat.

  12. Once hot add the ground beef, salt, pepper, garlic, oregano and cayenne pepper. Cook until brown, about 7 minutes. Remove from heat.

  13. Bacon Layer

  14. Line up the slices of bacon on a baking sheet and bake at 350 degrees for 20 minutes. Remove from oven and allow to cool on paper towel to drain.

  15. Meatball Layer

  16. Heat coconut oil in a skillet over medium heat.

  17. In a medium size bowl combine the beef, salt, pepper, garlic and oregano. Mix with your hands until well combined.

  18. Using a tablespoon at a time roll the beef into 12-13 balls. Place in the hot skillet and allow to cook through, about 7-9 minutes. Remove from heat.

  19. Pizza "Cake" Assembly

  20. Place the first crust layer onto a parchment lined baking sheet. Drizzle dough with oil.

  21. Top the crust with the pizza sauce, distributing it evenly.

  22. Place the cooked sausage on top of the pizza sauce.

  23. Top with the mozzarella cheese.

  24. Place the second crust layer on top of the first.

  25. Drizzle the crust with oil.

  26. Top the crust with the pizza sauce, distributing it evenly.

  27. Place the cooked beef on top of the pizza sauce.

  28. Top with the cheddar cheese.

  29. Place the third crust layer on top of the second.

  30. Top the crust with the pizza sauce, distributing it evenly.

  31. Place the cheese on top of the sauce.

  32. Place the bacon on top of the cheese.

  33. Place the final crust layer on top of the third.

  34. Drizzle the crust with oil.

  35. Top the crust with the pizza sauce, distributing it evenly.

  36. Place 1/4 cup of the mozzarella cheese on top of the pizza sauce.

  37. Place the meatballs on top of the cheese. You may opt to not use all of your meatballs!

  38. Fill in the "gaps" with the remaining mozzarella cheese.

  39. If you have any remaining "scraps" of raw dough you can choose to fill in any gaps in the crust layers with it using a well oiled spatula to spread in on the outside of the assembled "cake".

  40. Brush the outside of the assembled cake crust with oil and drape a large piece of foil over the cake to prevent over browning.

  41. Place into the oven and bake at 375 degrees for 35-40 minutes.

  42. Allow to cool for 30 minutes before slicing and serving.
