Dairy Free Ham & Scalloped Potatoes (Gluten/Grain/Egg/Sugar Free)

I fortunately don't need to eat Dairy Free. (I was for several years and my lactose intolerance magically went away when I got my autoimmune disease into remission!)

But all that to say..I get it. The dairy free cheeses in grocery stores are nothing to get excited about. They take quite a bit of getting used to. I wanted to create something MUCH MUCH better. This cheese sauce is just that- and you could serve these scalloped potatoes to anyone and they would have no clue this recipe was free of ALL dairy. I added Ham to the recipe but thats totally optional. You could also use bacon, or just no meat at all (If you want to keep the recipe vegan) Whatever route you go I can promise you'll love this delightfully cheesy dish!

Ingredients

Homemade Almond Milk (original recipe tweaked to accommodate this recipe):

·      3 1/2 cups water

·      1 packed cup blanched almond flour

·      1/4 tsp salt

·      Nut milk bag or cheese cloth (optional)

Homemade Brie Cheese Sauce:

·      2 2/3 cups almond milk

·      1/2 cup tapioca flour

·      2 tbsp nutritional yeast flakes

·      2 tbsp chickpea miso (optional- its added for flavor)

·      2 tsp sea salt

·      4 tbsp apple cider vinegar

The Rest:

·      2 lbs white potatoes, ~3 russet potatoes, peeled

·      3.5 cups fully cooked, chopped ham

·      1 small onion, diced

·      2 tbsp extra virgin olive oil, divided

·      2 tsp cracked black pepper, divided

Instructions

Homemade Almond Milk:

1.    Add water, almond flour, and salt to a blender and blend until completely smooth.

2.    If you're using a high powdered blender like a Vitamix or Blendtec, you don't need to strain the milk. If you're using a regular blender, you will need to strain the milk through a nut bag or cheese cloth in order separate the milk from the nut pulp.

Homemade Brie Cheese Sauce:

3.    Add all the ingredients EXCEPT the apple cider vinegar to a medium pot on medium heat and whisk for about 5 minutes until thick.

4.    Once thick, remove from heat. Do not overheat or you may break the emulsion.

5.    Whisk in the apple cider vinegar and set aside.

The Rest:

6.    Preheat oven to 350.

7.    Oil a large casserole dish.

8.    Saute onions in 1 tbsp oil for a couple minutes until translucent.

9.    Add ham and 1 tsp pepper and saute for a few more minutes. Set aside.

10.  Using a mandoline, slice the potatoes 1/8 in. thick.

11.  Line the dish with 1/3 of the potatoes, then 1/3 of the ham mixture, then 1/3 of the cheese sauce. Repeat, ending with the cheese sauce. Sprinkle with 1 tsp pepper.

12.  Cover with aluminum foil and bake for 40 minutes.

13.  Uncover and bake for another 35 minutes until potatoes are crispy.
